I know the lid locks for traveling--it is habit. It shouldn't cause any risk for explosion.

Honestly, the slow cooker function on the Instant Pot does not work well--but it can be done. Plan to cook on NORMAL temp (which is equivalent to low on slow cooker) as time directs. Here is more information on using the slow cooker function: amindfullmom.com/pressure-cooker-as-a-slow-cooker/

Grating the cheese yourself is also necessary for my mac + cheese. Now I know why it doesn't taste right with the pre-grated cheese.

Yes! I typically wrap individual slices in parchment paper or plastic wrap and then place in freezer-safe bag or container. Thaw overnight for best results and then reheat on heat-safe plate covered with damp paper towel in microwave.
