I don't eat eggs ... but looking to go to a diet that will be much lower carb, low to no added sugars and low cholesterol ... hoping this change will go well, it's one of those things I have to do or will have a serious medical condition turn very bad. Oh man! I just put a breakfast casserole in the oven and now I’m sad I didn’t see this video first. It might be fall, but it’s still 90 degrees outside and I’m heating up the house for nothing! This looks so tasty too!

I once, and only once, made egg, spinach, cheese or sausage muffins in muffin tins. I baked them according to recipe. I found that over the next few days they were spongy. I don't know if it was the microwave or what. The texture was not as enjoyable as the first moment out of the oven. Does your egg casserole in the Crock-Pot get a spongy texture the following days?

Wouldn't it be easier to just cook the eggs in the pan with the sausage? Can still reheat it later and one less dish/contraption 🤷

I believe the consistency of the finished product would be different. This is an actual casserole that can be cut into pieces...but you would probably end up with scrambled eggs by doing it all in the frying pan. Not that the pan method would be bad, just that the slow cooker method is an little different. Also you don't have to stand there moving the eggs around constantly. Either way would be good.

Glad you like them. We are finding that it’s not that hard to reduce carbs. It’s more a matter of planning and some discipline. 👍

@@LifebyVanessa I agree. I found no carb cereal and bought some. It from the cereal school. I got the fruity and cocoa. I am not a huge cereal person but I thought it would be good for a quick snack here and there. And it doesn't have bad stuff in it either.
