I cook and eat whatever I want. It was then I realized the lengths my mom went through to make sure the whole family eat healthy.

I usually hardly ever sub to channels and even less leave comments but i had to say thank you for your videos. Other than the quality of the video (kudos to whoever films and edits) I love the way you cook! I find that you do it in my same way, following the recipes sure, but also giving your personal taste, which i always found to be the best thing about cooking. Also you bring seriously drooling yet inspiring stuff on the menu :P

for best results, imho, don't butter your bread, but instead put a small amount of butter in your pan or on your griddle and spread it to the size of the bread. then place it. when ready to flip, remove the sandwich briefly, add the butter again to pan or griddle and gently replace the sandwich on top. this prevents the bread from being torn as well as giving you just the perfect golden brown crust without saturating your bread and getting that slight soggieness or overly moistness under the browned area.

Better to throw a couple of pains petites in the oven, spread it with a little water for the crisp. Layered with cheese, salami (optional in a pan.. for covering later, egg, onions, paprika and champions, bechamel sauce ). Or without the salami.. have some pineapple for Hawaii version. Simple but tasty.

Yet another great recipe, Sam! The Croque Monseir and Madame are choice classics! To those that haven't tried once (either one) it's a must for your foodie bucket list. Sam, Max... The Béchamel at 0:50... explain explain explain! Explanations enable viewers to understand what's going on here and understand the principles to make their own. In this case, you're building a SAUCE (vs. a ROUX). A sauce combines two elements that otherwise don't combine... in this case oil (or fat) liquid and a water-based liquid using an emulsifier. Your butter is the oil-based liquid, your milk (or broth or whatever) is the "water-based liquid, and the flour is your emulsifier! If you didn't add the flour to the fatty liquid, you'd just have a mess of separated butter and milk. The flour (emulsifier) brings them together because it has an affinity to attach to both a lipid glycerol molecule and a water-based molecule at the same time due to wanting that missing C (carbon) and H (hydrogen) elements from its hydrocarbon chain. Yeah, I know geek stuff. But when this is understood, you can make any variety of sauces, say combining pork belly grease (bacon grease) with chicken stock, or even just Crisco and water, whatever two liquids that would normally separate now can be combined with an emulsifier. Viewers might light to know the "why's" of what you're making so they can create their own renditions. Lastly, do you make use of a fat separator? Awesome for sauces (not roux). Pour off your drippings, let it settle (fats on top, water-based liquid on the bottom), pour off the bottom liquid, use the fat on top with an emulsifier to build whatever kinds of sauces you want. Love your stuff and please keep it up! Just humbly suggesting to explain the why's of what your doing so everyone has the knowledge to make whatever they want, beyond just blindly following a recipe.

Recipe idea: the ultimate egg roll. There is a place in Minneapolis that is called Que Viet. They make the most amazing fried egg rolls you could imagine. The egg roll is about 6 inches long and 2 inches thick... I love your vids...always fun and easy recipes

I made it to my wonderful wife with a little mod. I left the souse and instead I put some allioli to one side one of bread (of course not the mustard one). Taste is GREAT!!! Thank you for that SAM and the team (also to Louis...) ;)
