Thanks so much, Chef Vivien. I like what you put on top rather than what I would call white sauce, which most other recipes seem to use. Croque Monsieur sounds like a nice change from my toasted sandwiches, for which I don’t have a press so I use a frypan and press down on the bread with a good solid potato masher. I particularly like them made with thin sandwich bread, which makes them nice and crisp.

Postscript. My sandwiches, pressed flat in the frypan with the potato masher, usually contain tasty cheddar with a hefty sprinkling of turmeric and a little freshly ground black pepper. We’re not usually lucky enough to have ham, but when we do I use that too.

This is how I make cheese-sandwich (without the sourcreme/cheese mix!), but cook it in a pan with the lid, 5 min on each side, on medium heat. Though I spread mustard on one of the breadslices, and a spicy cucumber-mix on the other breadslice, before I add the cheese (Jarlsberg cheese is my favourite!) a😊nd ham. Soooooo good! ❤🧀

Do this very sandwich regularly for my kids. Sour cream tastes just fine in it. No need to cook bechamel in the morning and ruin the kitchen with dirty pans and flour dust)))

Swiss Emmental is quite a good melting cheese but a bit blasé in flavour. An aged Comte, Gruyère, Beaufort, Appenzeller, Vacherin (Alpine cheeses), all give a far better, discernible scent of a down wind along a cow Pasteur. Béchamel, Mornay is lovely but is a bit of a process making it and one can’t really make a small quantity. Sour cream or crème fraiche is a clever snd luxurious substitution/short-cut to the aforementioned classic and traditional mother sauce; decadent in its own right! I keep Croq Madame - as a morning menu item at my Bed And Breakfast but sadly, the typical, average American won’t order what appears foreign, unrecognisable - even if it’s suggested and described and with photos provided too

Oooooh the bread will be soggy especially the top piece which hasn't been sealed on top with butter so the topping will sink through it. You can if you like, like me make your Croque as above but butter the outside too and fry the sandwich three or so minutes either side in a pan till crispy and the cheese a bit melted. Then add your béchamel or whatever topping as here sour cream then set it under a grill until just blistery and brown on top. So many ways, there seems as many ways as there are cafes and chefs in Paris LOL, all delicious, all unique in tiny ways. And isn't it wonderful that there isn't a standardised version as its very simplicity lends to so very much delightful creativity. Ironically the worst I've ever had in my life was at a "Deli France" franchise in Hong kong. The cheese inside wasn't melted (still hard) and the bread wasn't crispy but dried out like stale bread, no butter of course, the cheese wasn't even Emmental either but some kind of industrial cheese like substance like the ham which was to die from. The topping so much like rubber I peeled it off and threw it away instantly. At least I got a stale cheese and ham sarnie out of it. They should not be allowed to call themselves Deli France it's a gross insult to the French!

He did mention that this is an easier recipe if you don’t want to use sauce béchamel. He also mentioned that there are multiple ways of making it. This is his preferred way. You’re more than welcome to make it the original way. 😊

Believe me, it works beautifully and tastes just as good as the traditional recipe if you follow his instructions but if you prefer it the traditional way that is also delicious. Enjoy it however you like it.
