This is one of the best jollof rice recipes on youtube. It's so similar to how my friend and her mom makes hers and it's delicious. That's why I love Ghanian jollof rice over Nigerian jollof rice. I've tried this recipe a few times and I really like it. Today I made this recipe in the rice cooker. I made the stew on the stove top and then added it to the rice cooker on the stew and simmer setting. Once it started to bubble I added the rice and water and just let it cook. I has to add extra water to make sure the rice is cooked. Thanks for sharing this recipe!

I made it a few times. The first time the flavors were there but the rice was too soft. I also tried making in the rice cooker and it turned out great. I'm still trying to master the right amount of liquid but as they say, practice makes perfect!

damphatty hi! I’m Ghanaian, maybe I can help - after you wash your rice, sieve it, but keep the little water remaining in a bowl, then pour your rice in and stir, then after about five minutes, sprinkle your salt and then add about quarter cup of your water (you can half the amount if you’re not sure) and stir, then check every four minutes or so, and add the water bit by bit each of those four minutes till you’re satisfied with the amount. That’s what I do to prevent putting too much and it always works. Hope this helps ❤️

I am Ethiopian use to have a Ghanian boy friend 11 years ago. We were together for 5 years before he run away with another Moroccan girl. He was a good cook also his sister they both thought me how to make jellof rice and i use make it nicely. Now as in see your video it in courage me to do it all over again. This is great! But my first ‘African’ dish was not jollof rice. I fell in love with our food (yes our-as black americans, our roots come from Africa) through palm nut stew and cassava (not together, but those were the two that introduced me to our food). I didn’t get jollof rice until after egusi soup.

Please did you remove the star anise from the meat stock b4 adding into the rice pot, I want to also know if is treated the same way as bay leave i.e. whether it can be chewed or removed from food after releasing its flavor
