The reason why they are left white on top is because they are toasted before serving. Traditionally this was done before an open fire with crumpet forks. This leaves them brown and crisp on the top but soft and spongy in the middle. Done well and served with butter, they are heavenly.

After making this the crumpet police kicked down my door at four in the morning, locked my wife in the living room, incapacitated my dinner guests who stayed the night with tear gas and tried to kidnap my children. Great recipe, but Bruno, you need to grill the crumpets once they’ve gone cold to get the best from them. The outside crispy and the middle soft. Then you butter them. They are cooked twice.

perhaps you can make them when you have freetime . Freeze them and to heat pop into the toaster to heat. Though I would cook them less when preparing them to freeze. I think this would work.

+Dalek Green I am not positive but I think you might be able to allow the poolish to rise for 90 mins on the counter and then refrigerate overnight, allow to come to room temp in morning and then add the baking soda in water.  This recipe is so easy that it is worth the try just to see if it works.

Mr. Albouzi wonderful video! How I wish You (or anyone!) could teach me to make crumpets! I am a total crumpet maker failure!! I have tried so many recipes...This is the first recipe I have tried with baking soda and it looked great! Everything looked just like the video. Until I cut them open. As always they are mush inside! No matter what recipe I try they come out looking beautiful outside but undercooked inside. I have made the batter thicker/thinner, cooked longer/less time, higher/lower temp. The result is always the same. Is there some secret trick to these things!? If anyone can help I would appreciate it. My Grandfather was a baker known for his crumpets. Sadly he died long before I was born and clearly I didn’t inherit his ability!

Bruno , regardez la recette des baghrir , ce sont des crêpes marocaines et c'est quasiment la même recette .les crêpes font également des troues. check out baghrir , it's a Moroccan kind of pancakes and it's almost the same as cramps with the bubbles.
