I made this one and the first couple of days it was quite good. By the fourth day it didn't taste good. I followed the recipe exactly, so I recommend that it's really eaten within the first couple of days. Thank you.

Hi 👋@LindaWilliams 👋YES, you are absolutely CORRECT👍 By the third or fourth day, the cucumbers would have turned a corner, into a slushy gel-like consistency, making it inedible. My personal preference is to consume these pickled cucumbers within 24 hours, post the initial 12 hours pickling period (as mentioned in the video @6:15). When making the pickled cucumber can I save the juice and when all is consumed can I add more cucumbers after I did the salt bath to the juice.

Hi Gail! So nice of you to refer my Korean cooking channel to your friends😍. As for reusing the pickling juice, I would advise against that. Every time we, Koreans, make any sort of pickling-anything, including kimchi, we remake everything from scratch. We never reuse the older picking juice or paste. You want to restart with the fresh vegetables and create that same pickling process with new fresh pickling process.

As a native Korean I recommend oigee,오이지 is really the best when it comes to cucumber. Traditional way of making 오이지 will be appreciated. 오이지냉국, 무침 부터 고추자에 찍어먹기도 하며 여름의 명물이며 건강상 여름에 salt가 몸에 필요하기에 우리조상의 지혜가 담긴 명물 오이지를 세계에 알리면 좋을드해요. Far better than cumbersome pickles made in the U.S.

Hi Pam Pam! Excellent question. NO, reusing the liquid is not recommended. It will alter the taste and actually spoil it. When pickling our vegetables, we, Koreans, always start from scratch so all the ingredients ferment together from the start. Luv hearing that you had this with bulgogi. Washed Korean cucumber with a little salt is already heaven ... so all this draining water is fine but doesn't really lead to great taste .... cause it depends on personal taste and just add pepper flakes or paste or sesame oil and you already killed it and add a little sugar to make it great .

Some like it saltier with more garlicky taste, some like them extra vinegary with sugary taste, some like them w very little liquid/no salt brining but with lots of spiciness (GoChuGaRu, GoChuJang, julienned green & red peppers, onions, scallions all mixed w vinegar, sugar and topped off w sesame oil & seeds). I really love all variations of these fresh cucumber pickles/sides-dish/banchan😋🥰🤤.

This cucumber dish is one of their side dishes and many Korean restaurants serve this or similar versions of it. no worries. anyone who has made a recipe public knows most people will never make it themselves. they read, want to eat it, and go to the restaurant or buy the product instead. it is just the way humans work.
