Cucumber Uses- What to do with oversized cucumbers. Preserving and Recipes

When it rains, It POURS cucumbers... Am I right?! So you've collected them all and you're now looking at multiple buckets packed full of cucumbers. Pickles aren't the most popular food, but does that mean you should skip growing them? HELL NO! There is SO MUCH you can do with them. Their much more versatile then you think..... and for anyone out there who IS growing a lot and feeling overwhelmed with their yield or waited too long to pick cucumbers good for pickles: Listen up!!
Fresh Cucumbers alone have so many benefits from salads, to a prime dipping vegi, to salsas, dips, drinks, smoothies, and the list goes on.
Dehydrated cucumbers can be grounded up into a powder and are fantastic to use in Dips, dressings, sauces, or a cucumber flavored thickener.
The powder is also great to use on your skin.

I do really like, especially from a prepper standpoint, the hanging rack method too. Obviously, this product works best in warm weather but regardless it's good to have in case power becomes a future concern and also the use of it allows you to use much less energy due to transferring them after dehydrating has started and needing half the amount of time, if not less, to complete the process.

Moral of the story here, cucumbers are a lot more versatile then ya think! Their an easy vegi to grow and yield a lot to save! So have fun with it. My favorite part about gardening is harvesting and creatively finding new approaches to preserving and using my food. It's caused me to learn and try new recipes along the way!!

I did learn something new today! You and I think a lot alike 😁. I walked in from picking a bunch of yellow cucumbers, sliced them and put them on my nesco to process into powder. I plugged it in, grabbed my phone and there was a notification for this video. Coolness

Thanks. I grew full size cukes last year, and this would have been great. I tried lactofeementation pickling and they were mushy even with bay leaves and oak leaves (tannin supposed to help). I should have offered the seeds!! I have smaller pickling cukes this year, and I will try fermentation again. If you have tips that would be great.

Idk the ones my mom grows get up to 3 to 4 pounds & they turn yellow & we usually freeze them for later winter months , cucumber kimchi works to

It’s best to always check with each food you attempt to pickle due to the different acidic levels. What were you thinking about pickling? Maybe I have a good recipe :)

Cucumbers grow overnight I swear. Sometimes in a large patch they can go unseen for a few days and you have yellow giants! On the bright side they are a prolific producer.

I forgot about those fat yellow cucumbers in my parents garden. After a certain size they would get composted as no amount of salt and vinegar would make us kids eat them. Haha.

I don’t blame you, my first year I gardened I tried making pickles out of the oversized ones and they just weren’t good. Idk if I’ll ever have my shit together enough to get out to my garden in time for every one to grow to proper size and not over so that’s why I usually just dehydrate them now haha
