I'm Boone Bake.
Today, I made a caramel coffee buttercream cake with a rich flavor.
If you make it according to the video, anyone can make a coffee sponge cake with fine grain.
If you want to make a soft, fluffy and dense coffee sponge cake, take a closer look at the video.
It is no exaggeration to say that coffee cake goes well with butter cream.
The buttercream we made this time is a really tasty combination with anglaze sauce and caramel sauce added to it.
Of course, it can be a bit cumbersome.
But what is delicious always comes with trouble..
Also, if it is too soft, the texture may not be fun, so I mixed chopped almonds with sugar and fried it a bit, and the crunchy texture was really good.

I used coffee liqueur for my coffee syrup, but if you don't have kahlua, you can mix coffee powder or espresso to your liking.

15ml = 1Tbsp

3 eggs
25 g brown sugar (2 Tbsp)
70 g sugar (1/3 cup + 1 tsp)
A pinch of salt
4 ml (1 tsp) vanilla extract
95 g (1/2 cup + 2 Tbsp +1 tsp) cake flour
30 g milk (2 Tbsp)
5 g of instant coffee (1 Tbsp)
30g unsalted butter (2 Tbsp)
● Caramel Coffee Butter Cream
(Anglaise sauce)
40g (2~3) yolk
25 g sugar (2 Tbsp)
60 g milk (1/4 cup)
3ml vanilla extract
(Caramel sauce)
60 g sugar (1/4 cup + 1 Tbsp)
25 g water (2 Tbsp)
50 g warm milk (4 Tbsp)
5 g instant coffee (1 Tbsp)
A pinch of salt
100 g sweetened condensed milk (1/3 cup)
230g unsalted butter (1 cup + 1Tbsp)
● Caramel Almond
50 g almond chopped (1/3 cup + 1 Tbsp)
15 g brown sugar (1 Tbsp)
● Caramel coffee glaze
80 g sugar (1/3 cup + 1 Tbsp)
70 g water (1/4 cup + 2 tsp)
75g starch syrup (3 Tbsp + 1/2 Tbsp)
45 g sweetened condensed milk (3 Tbsp)
75 g white chocolate (1/3 cup + 1 Tbsp)
5 g powdered gelatin (1/2 Tbsp)
25 g of water (1 Tbsp + 2 tsp)
● Syrup
50 g of water (3 Tbsp + 1 tsp)
35 g sugar (3 Tbsp)
7g Kahlua (1/2 Tbsp)
(Or rum, or 1/4 tsp of instant coffee)
How to make ㅡㅡㅡ ㅡㅡ
By weighing water and sugar
Melt the sugar in the microwave and...
Mix in Kahlua and cool to room temperature.
