We are in a Donut induced coma over here at CCJ headquarters. Jemma, Sally and Dane came up with 3 incredible Donut flavours for you guys and they are all utterly ridiculously delicious!!
First up is Jemma with here Salted Caramel Creme Brûlée, followed by Dane and his Passionfruit and Milk Chocolate Donut, and then Sally with her Limi and Hibiscus Mexican Donut!
There are an absolute HEAP or recipes in this video including Salted Caramel Creme Patisserie, Milk Chocolate Creme Diplomat, Lime Curd, Passionfruit Curd, Hibiscus Glaze..... 150g caster sugar
1 egg
3 egg yolks
3 tbsp cornflour
120ml double cream
480ml milk
1 tsp salt
1 tbsp vanilla
45g of cold butter
Brûlée Top
300g sugar
8 tbsp water
Milk Chocolate Creme Diplomat
150ml Whole Milk
1 Egg Yolk
1/2 tbsp Caster Sugar
5g Cornflour
1/4 tsp Salt
100g Milk Chocolate
Double cream
Passionfruit Curd
55g Caster Sugar
55ml Passionfruit Purée
3 Egg Yolks
1/2 Whole Egg
45g Cold Butter
Chocolate Bark
125g Milk Choc
Freeze Dried Passion Fruit Crunch
Passionfruit sugar
Caster sugar + freeze dried passion fruit powder
Lime Curd
110g Caster Sugar
110ml Lime Juice
Zest of 1 lime
6 Egg Yolks
1 Whole Egg
90g Cold Butter
Green food colouring (optional)
Hibiscus Glaze
25g dried hibiscus flowers
250ml water
235g icing sugar
½ tbsp liquid glucose/golden syrup
