Has anyone ever answered the "obsession with sieved egg yolks" question satisfactorily?

Honestly for this recipe it seems like a natural combination, as an angels food cake involves extra whites without yolks, and in 1909 you lack large amounts of constantly available refrigeration, so if those yolks are usable in the filling/frosting/icing, well there you go! Plus for any cook who uses egg whites or yolks seperately, you are gonna have more of the other leftover, so these kinds of recipe naturally fall out of just assuming rational behavior when someone makes Curds (yolks) or Meringues (whites) or egg white omelletes or mayonaise or hollandaise or light cakes like angel food cake or all sorts of things. Plus egg availability wasnt standardised: when hens lay more you have more eggs to use, and eggs might be cheaper locally when hens are laying more seasonally or daily even if you dont keep them yourself, so having a bunch of ways to use up leftover eggs so you arent wasting food is vital to be thrifty!

No idea what I would have added to the sandwich. Chocolate though? Seems fitting, it works well with orange flavor.

Oh my, with the shaved chocolate. Just make it a frosted cake, then drizzle orange liqueur syrup over that.

sieved yolks could easily be replaced by microplane grating…a lot easier to do and you’re used to doing it

Nice job with that cake! That Cupid’s sandwich looks delicious 😋 you’d need to find a use for the edges, but those should be darling if you cut each sandwich with a heart shaped cookie cutter.

No, I tend to film the day before to give myself time to edit, write, and stage. When I started I was doing it same-day and not only was it stressful but chock full of errors. Not that I am error-free now by any means lol

I like the music for the making of section, though it should go all through until the taste test, be a little quieter, and fade out as the video transitions. If it's going to stick around that is, I honestly think this is one of the few channels on this platform that could do identical videos every day and keep gaining an audience regardless.

Your girlfriend (assuming you two aren't married, since you call her your SO and not "wife") and I share the same name. 🙂 I just always find it funny when I find someone else named "Christine," since it doesn't seem to be that common of a name. It's usually "Christina." Ugh, can't tell you how many times people have called me that instead of "Christine." Sometimes they do it just to piss me off. 😂

it’s in the yolk, but since your grated it you’re making it light thus less taste if it were true then you’d taste it in the food cake and other desserts that feature the whites

Might be good using pound cake. Sieving egg yolks is worth the bother. I do this when making devilled eggs for a party. Unless it's all guys, then who cares. Ha, ha.

Thanks, Josh! I just love to cook (and clearly eat lol) and have a lot curiosity. This was my first time making Angel Food Cake and as my significant other will attest, I have a terrible track record at baking. But I keep at and seemed to have turned corner a bit thanks to do thing this series.
