Negitoro is one of the example of those, they are actually come from meat around the bones that could not being processed. We take them one by one and make Negitoro. It’s super good plz try it if get some chance;)
Japanese people specialize in term of tuna industry productions; the cold storage facilities are highly equipped and properly organized and also fish handling is adopting proper hygiene.

Japanese fishing companies have exceptional freezing technology, allowing the fish to be consumed as sashimi even after thawing. The fish is exported to Europe and other regions as Sashimi and Sushi ingredients. It's more affordable than fresh fish and can be consumed safely. This video showcases the true process behind it.
