Ganache (15cm x 15cm mold)
White ganache
・ White chocolate 200g
・ Heavy Cream (35%) 65g
Matcha ganache
・ White chocolate 180g
・ Heavy Cream (35%) 80g
・ Matcha 6g
Chocolate ganache
・ Sweet chocolate (56%) 180g
・ Heavy Cream (35%) 90g
(If you use a commercially available chocolate bar, please use bitter chocolate)
Pour into a 15cm x 15cm mold and
Refrigerate for at least 5 hours.
Cut to 3 cm x 5 cm.
Cookie dough
[Base dough]
・ Unsalted butter 50g
・ Powdered sugar 35g
・ Whole egg 20g
★ Cake flour with one of the flavors
↓
↓
★ Plain
・ Cake flour 100g
★ Matcha flavor
・ Cake flour 95g
・ Matcha 3g
★ Chocolate flavor
・ Cake flour 90g
・ Cocoa powder 10g
The cookie dough is 3 mm thick, stretched into a square of 20 cm x 21 cm or more, and rested in the refrigerator.
Cut to 3 cm x 5 cm.
Baking
1. Preheat the oven to 356°F
2. Lower to 338°F and bake for 10 minutes
3. Lower to 320°F and bake for 7-9 minutes.
Bake to the middle of the cookie until it is slightly browned!
