Can I do it without an egg

Hi Nirmala. That's a good question. I have not made this bread without egg or using an egg substitute, but here's what I think. There is only 1 egg in this bread, so I think a substitute would work well. Eggs in bread are a leavening agent, help to increase yeast activation more quickly during baking, and produce a tender, lighter, fluffier loaf. Having said that, King Arthur has a good website describing in detail all about egg substitutions and which works best in different types of baked goods. In looking at their website, I might try either aquafaba (chickpea/garbanzo bean juice) or flax/chia seed egg as both seem to work well in yeast breads. If you try a substitution, use the recommended amount for 1 large egg. I hope this helps. If you give a try, let me know how it went as I'm curious.
