I read somewhere that the word „shawarma“ was originally a turkish word. The Word is „cevirme“ which means „spinning“ in turkish. I thougt it was quite interesting. Loved this Video btw ❤

I think it is not Ketchup but sambal/chili sauce, together with Garlic sauce (the white sauce). they use it in my local Turkish snack bar and it looks like ketchup form a distance

the thing you liked on the hot pan is called kavurma but its mixed with different ingredients i think... its made for a family/friends gathering usually... like bbq... usually kavurma is just small pieces of meat mixed with pepper tomatoes onion and so on but i think he added carrots and stuff so im not familair with this... its speciallity is that its oil is made with kuyruk yagi... which is i gues tail fat? idk... im not a chef myself... i just like eating
