This was the first recipe I made , and it is the best noodle recipe I have ever made , Mr Lau knowledge and experience is spot on , I followed his direction for cooking noodles and they came out perfect , I love noodle dishes but everytime I tried to make them at home they never came out as good as I have at restaurant , thank you Mr Lau , I now have the method , delicious

I had this dish in St Thomas island and loved it. I cannot find it here in restaurants. I had tried to make it once. I know now with the wrong noodle. Using my wok it became a sticky greasy disaster. I love watching and listening to Mr. Lau.. His dishes are authentic and I love his reasoning to what and why/ how the ingredients are used. I’m curious, how can people give it a thumbs down, his videos are very thorough in his explanations. if you’re going to give it a thumbs down, would you explain why? Because I don’t see any problems.

Perhaps they did not like the recomendation to use refined oils, which studies have shown to be worse for us than their unrefined counterparts.

Mr Lau has changed my life !! My Chinese food was very ordinary before I started following your recipes. I've tried so many different recipes and they have never tasted authentic. My noodles, in particular, were terrible - I made this recipe today and it was sooooo delicious - it's the second noodle dish of yours I have made and it was brilliant. Nothings better than Hong Kong style chow mein 🥰. Cantonese from Guangzhou to Los Angeles since the late 1800’s. My grandmother raised us eating nothing but Cantonese dishes. Love it, love it, love it 🥰.

FYI: It should be noted that smoke point does not correlate with the point at which oil breaks down. For example, olive oil is one of the most stable oils but has a low smoke point, so in fact you can cook with it at high heats.

Thank you for this recipe. I've always wanted to try making this at home (it was one of my favorites when we went out to eat when I was young, and I always ate too much of it), and this way is very practical. I also will say that I love that I don't have to use the subtitles, as I often have to when Mandarin is spoken, which I never learned. Born and raised in the US, with family members speaking either Cantonese or Toishan, and even though I'm far from being fluent these days because I don't practice enough, it's nice to be able to be able to just sit and listen without reading the screen.

With this video, not only your dad explains the import tidbits of each step, but also felt like I'm learning and sharing something special from your family! This is my favourite noodles . I used to go to a Hong Kong restaurant for lunch when I was a student ,and nearly everyday ordered this style cooking of noodles. Ingredients wise, the only difference is that they added tofu also. I have started cooking it at home after moving away. I went back years later but they were shut down. I will follow this recipe as it seems better than the one I am using. Thank you.

Steaming the noodles helps gelatinize the outer layer of starch which can make them less sticky.

Thanks to Papa Lau for the recipe. 1st of all,being a muslim myself,it nice to learn original chinese dish recipe so i can tweak the recipe if it include items that are not halal. Back to the recipe,i notices that in Singapore,where i lived,the sauce is a little darker & i notices that your dad did not put an egg in it,but he used cornstarch to thicken the sauce. Is the darker version consist of egg in the sauce or is that really optional? Thanks once again from Singapore.

I can't describe how lucky your kid is growing up having great food and love from grandparents. That's all a kid needs. Not money or gifts or a big house. I saw my wife growing up the same ( we were friends from childhood). Her father used to work in Chinese restaurant. She ended up hating eating outside cause her father's cooking was so good. And now we had to move to her house because of Covid, my kids are having the same food and they enjoy eating so much. Sometime, happiness can be so simple.

I love this dish, it’s an all time favorite since I was a kid and a must when we get Chinese food. Can you make a video for shrimp fried rice? I was trying to figure out how to prep the noodles for frying. Thank you Chef Lau for the little kitchen secrets for perfectly crisp noodles. I think I will also keep the noodle pancake warm in the oven or air fryer while I’m preparing the vegetable/meat topping. Great to know this classic restaurant dish can be prepared successfully at home with less oil, but a little more time.

You probably know this already, but I'll point it out anyway. This dish is very traditional for birthdays. Noodles are served because long noodles represent a long life and in this dish, unlike soup noodles, can be shared so that if someone doesn't like noodles, they can just eat a small portion preserving the tradition but not having to eat a lot of stuff that they don't like. When I make it for myself, I cut the noodles so that I can eat it easier, but cutting it is a no no for a birthday celebration. I hope you enjoy it. Happy birthday to your dad!

I made this using whatever ingredients I had(no chicken, no carrots, and I used napa cabbage in place of bok choy) and it tasted amazing! Most important part was getting the gravy right and following the technique to get the crispy noodles. Thank you for this recipe!

Thank you for sharing this recipe! I made it myself and I must say, this is absolutely delicious!! You can alter the ingredients to whatever your preference is, I added some chinese sausages as well. My mom grew up in Hong Kong, and she loves it too ❤️❤️
