This is the all time favorite of the men in our household. Thank you. I’ve had trouble with these noodles, not being able to tell which need boiling or not. We even have this brand at one store. Thank you for helping those of us who didn’t grow up with Chinese ingredients. We actually prefer to make Chinese for 3 times a week on average.

This exactly what I've been looking for. I've eaten this in a few restaurants over the years and I love it. It has been difficult to find in many restaurants though, as they have dishes called chow mein with crispy noodles, and it turns out they use these tiny little crispy noodles that are more akin to thin potato crisps, and to me they are trash compared to these noodles.

I'm not averse to MSG, but there's already lots of umami in the soy and oyster sauce as well as the mushrooms, scallops and shrimp, so I don't see a need for more. But of course make it to your own taste.

Firstly, i love your channel and you have the best dan dan noodle recipe. Crispy noodles sounds great, but doesn't this taste of olive oil? Every Asian chef i've watched says use any neutral flavoured oil (usually peanut) but NEVER olive oil because the taste clashes with the flavours of Asian cuisine. I'm curious what other people think of using olive oil in Chinese recipes?
@annesec99953 жыл бұрын
I just made the noodles for lunch. It’s too much oil for me, so I used a non stick pan with two teaspoons of oil and a medium heat. Then I followed the instructions. Mmm... delicious.

I cooked this tonight and it came out pretty similar to yours. The crunchy noodles were yummy and the prawns and scallops were soft but I thought the gravy of the stir fry was a bit boring for a dish that uses such delicate and pricey seafood like scallops. Their delicate and juicy taste was completely lost in the soy and oyster sauces. For that reason I wouldn’t make it again, at least I wouldn’t recommend making it with seafood, perhaps chicken would work better. Thanks for the recipes and videos.
