you're right about how hard it is to do short order well. i worked at a denny's in the 90s & when tour buses stopped in, I'd get 120 people ordering breakfast, lunch & dinner items at the same time. after doing a few massive rushes solo, I walked off the line as they refused to keep 2 cooks on duty, so it was a nightmare for one guy. much respect for the griddle man. even after 2 walk offs, they were still trying to keep me working there because so few can people can do it correctly & fast

Come on Now, where did You live Pat, I was onMiller Ave., never heard of John's? They were across from Terrelli's and Greenville Bar and Grill. Couldn't get in the place on the weekends! Sometimes I Miss Dallas, not in the summer! Jack

When I was a breakfast /lunch cook many years ago we use to do this type of cooking all the time so much going on so many things on the grill at the same time the specials we would come up with were so good and the burgers we made omg so good but because the buissness was a franchise and it didn't care about the buissness it went under I remember 3 franchises closed in The same year I moved on but great memories with staff still friends with many of them

I used to work at the Goody Goody Liquor store in the mid-1990s down near his original location where the bank is now. His breakfasts and gyros were a normal hangover cure for me after a night of cruising Stan's Blue Note and other lower Greenville Ave bars with co-workers. John's original location is now gone, the liquor store is now gone, the whole place has changed.

I remember Daddy Jack's on Lower Greenville and thought you had one in Deep Ellum too. I saw you in our liquor store back in the day. You had a chef's outfit on with shorts which for some reason at the time cracked me up. But then again, it does get hot in those kitchens.

I wore short pants for over 10 years straight never wearing long pants. Not sure why but it was my thing. We did have a daddy Jack's in Deep Ellum as well. It was a good run but all things comets an end. I'm close to shutting this Dddy Jack's down, impossible to make the numbers work! @@CookingWithTheBlues My name is Shawn, but everyone on Lower Greenville called me the Goody Goody Guy when I worked there in mid-90s. I was a tall skinny guy, at the time, with really long dark hair down to my butt and a goatee, because I was in a band at the time, so I was pretty easy to spot. And yeah, you used to look kind of look like Bluto from Popeye at that time. I thought that was funny as well. I'll contact you on Patreon.

Tzaziki is the best Greek sauce.Very good with fried shrimp, baked chicken and fried baby squid. Greek chefs are very good with lamb. If going to dine in a Greek restaurants first time just ask for a Meze which is a mixed plate with all what is good in Greek kitchen. As it comes to wine it gets more difficult. Best thing to do is to order a rosé wine or just ask a bottle of Matheus (White, red or rosé at choic. Greek restaurants sell many times the retsina wine which is not based on grapes but on pine resin. They also serve the Ouzo shots after dinner which have a brandy like flavor. Also very very good in Greek restaurants is the fresh fried squid rings. My pancakes are better. Crèpes is on e of our specialties and is not easy to make.

Till later. Today I am making shrimp stuffed cold tomato, with French fries. That is a dish in Belgium and Holland because we have those very small salty sea shrimps you cannot find in America.

In Seattle we had THE DOGHOUSE it closed 20 years ago that wasn't really a great meal place it was more the cranky waitresses and the crazy customers . For breakfast is Beth's Cafe home of the 12 egg omlete. .I was in there one Saturday night Sunday morning in the late 80s they had a cook from Ireland northern Ireland working when 2 guys from southern Ireland came in giving him a bad time. And the cook said something to them as he pulled his chefs knife from his apron stabbed both wiped his knife of and put it back in his apron and went back to work like he just had sliced a tomato or something . Wow, bad ass cook! 12 egg omelette, that's how it's suppose to be, eggs are cheap!! Crazy stuff happens in diners late night. We have a good one here that always has late night trouble but they have great security. Cops are there in seconds. Everything looked great until they added cheese on the fries, when you got a Ham and Chedder sandwich. To much cheese. Other than that food looks good.
