Today's Recipe : Dalma Recipe in Puri Lord Jagannath Temple Style | Jagannath 56 bhog Recipe |
Puri Lord Jagannath Temple is one of the char dhams in India where three deities Jagannath,Balabhadra and Subhadra are worshipped.Lord Jagannath is the avatar of Lord Vishnu.Daily 56 dishes are served to the Lord which is called chappan bhog.Why only 56 dishes are cooked as the bhog? Check out the video to get the answer of this question.
Dalma is one of the main dishes of Chappan Bhog and served to the Lord for thousands of years now. It is considered as Lord Jagannath's favorite food.
In Puri Temple, only native Indian vegetables,nuts,fruits and spices are used in the cooking of the bhog.There is no usage of onion,potato,tomato,chillies in Dalma recipe.
Dalma is an integral dish in Odisha meals.It is served with steamed rice topped with a dollop of ghee and a mixed vegetable curry which is called besara.
In this video,we have made an attempt to cook the Dalma as close as possible to the recipe of Jagannath Vog offered in the Puri temple.

Thanks you so much 😊. We have tried to prepare Puri Jagannath temple style Dalma thats why not used chillies. It’s not permitted in the temple but you may use for home style dalma. Jai Jagannath 🙏🏻

Ingredients : A. Dalma Ingredients : Toor / Arhar Dal - 1 cup Moong Dal - 1/2 cup Ginger (grated)- 1 tablespoon Rock salt as per taste Turmeric powder - 1 tsp Grated coconut - 1 tablespoon Vegetables cut into medium slices : Raw Banana - 1 Taro root - 5 to 6 Small brinjal - 2 to 3 Red pumpkin - 250gms Parwal / Potol - 5 to 6 B. "Dalma Masala" Ingredients : Cinnamon - 2 inch stick Cloves - 5 to 6 Black cardamom - 2 Black peppercorns - 1/2 teaspoon Cumin seeds - 1 tablespoon Coriander seeds - 1/2 tablespoon Fenugreek seeds - 1/4 teaspoon Dry Roast the spices and grind into a powder. C. For Tempering : Cow Ghee - 1.5 tablespoon Hing - 1/4 teaspoon Cumin seeds - 1 teaspoon Hope this is helpful.Thanks for watching.

Chillies are not used in Jagannath Temple in Puri. So this dalma recipe is Puri temple style. Thanks for watching 😊🙏

mam no stiring should done....it is prohibited in puri....they dont stir...

Ma'am with due respect, as far as I know even Hing is not used in Jagannath Puri Temple

Thank you Sir for sharing the information. All along I have known hing is an integral component of Mahaprasad recipes and extensively used in Sankudi Mahaprasad. In case you have any reference supporting that hing is not used, kindly share with us. It will be of great learning.

@@ArpitasCookbook unfortunately I don't know of online reference. But I have visited Jagannath temple lot of times. The guide(Panda) of temple used to assist me. He told us that Hing is not used. Reason he gave was that all ingredients used should be Satvik in nature and Hing falls under Rajsik category. I personally used Hing and felt he was correct. Hing does increases my Rajsik nature. It is my opinion though.
