@@ianbelletti6241 Depends on the respirator and what you are trying to filter out. Particulate matter, he is just fine with the one he has. Toxic gases like those used in CBR warfare probably not. They do now make respirators in full face hoods that will work and snorkels as well.

@@leevann5592 OSHA requires that facial hair be sufficiently shaved off that it doesn't interfere with the seal where the respirator meets the face. OSHA doesn't care what you are blocking with the respirator because proper usage requires the respirator to seal against the face. To test this, you have to cover the intake and inhale. If it doesn't suck to your face and air is getting around the seal, it's not seated right on your face. It comes down to proper usage. If all you're doing is blocking particulate, a dust mask is much simpler and less demanding to properly use.

One thing to be cautious with regarding these type of knife sets is that they’re often made of whatever scrap metal the makers find, this means that they often contain metals like lead or other metals that can be harmful to our bodies so we no longer sharpen or restore knives from Pakistan in our shop..

what about Frost Cutlery's BEAR HUNTER series pocket knives with SOLINGEN 440 stamped on the blade ? i remember Case had damascus knives and the laminates came apart so do not think it is only the imports that are garbage

@itachisasku Yes, actually. I've used lead detecting swabs on cheap knives and swords from Pakistan, India, and Mexico and found lead many times. Rarely in the blade but very common in brass parts of the handles. I'm guessing they melted down old plumbing parts because they stopped putting so much lead in brass in the late 90's/early 2000's.

It can’t be said that everyone contains lead but there is definitely a risk using these knives in the kitchen

Are they really getting "ripped off" if they are thousands of dollars less than a similar high quality set, sounds like they got what they payed for. I would almost be willing to buy a set and finish work myself and I'm not a knife-smith, just cheap :) I would say it is false advertising if they are claiming they are made to high quality specifications though.

Yeah. Cheapo knives also so often are "damascus" steel i guess because of the old myth pattern steel is better, and they often dont say what steel they used for it. I used "damascus" because in modern times pattern welded steel is called that, but what it historically meant is different although it does have pattern too, but back in the day they started using "damascus" simply as marketing term for pattern welded stuff like high end custom shotgun barrels for example then later the absolute cheap junk just with patterns started appearing. If i would want budget deacent knife set i would just go with some well known brand like victorinox. Sure they might not be as pretty as some custom high end knife, but at least you get very usable knives that even many professionals use in food industry.

I worked at a deli when I was young and the guy who came in to sharpen the kitchen knives every week destroyed my cold steel ti-lite. Completely rounded the tip off into a butter knife. He was a real "professional".

Well, you've really saved me with this video. Someone gave me an Etsy giftcard, and I wound up looking at "hand made Damascus steel" knives. Now I don't know a whole lot about knives, but I've owned a few good one, and I do know you don't typically see such a good looking knife for 50-60 bucks. Kept thinking, "wow 70% off?" Too good to be true. After some research I now believe that most of them are Pakistani made knives cheaply imported into Canada to be resold. Hello from Cape Breton btw.

Really appreciate some of the details and comments you made about these. I've seen several examples of mass-produced knives with that same oversized tang, and I couod never figure out how that was functional, comfortable, or even decorative. Same with your take on finishing the handle. Just say no to lacquered handles!

@@daw162That's not the case lol. These are produced by smaller Smiths that sell them to companies or sell them themselves OK etsy or eBay. I have many of them from years ago, befire they got popular and produced on the mass market, they weren't made for kitchens then, they were made as hunting blades and had far better materials. I actually contacted the black Smith I used to deal with in Pakistan, he straight put told me it's not the same materials anymore and not to buy them from him lol. These were poorer blacksmithing families that have great skills, but found a way to make more money faster, they sell to American and Chinese companies in bulk and have hired far less skilled people to aid them. They arent slave workers, tgey just cut back on materials and have unskilled labor because they can. He actually gave me contact Information to reach another family who still does higher quality knives, far better materials, they are slower, a bit more expensive, but definitely great at what they do. These craftsman in Pakistan are just taking advantage of a market to become wealthier and I dint blame them. If you think you can buy a quality Damascus steel knife for 20 bucks , that's your mistake. They have learned from China.

Excellent guidance. I had no idea about the great gap filling products! I still like to give wooden handles a penetrating oil finish such as teak oil. I can buff away most of the surface finish, but having the wood pores filled makes the wood age slower, especially if the handles get wet.

I almost always use teak oil finish on my knife handles--specifically because it soaks in and protects against moisture. Looks good, too.

When one Damascus knife starts at $300 for a single. A set should be expensive. But it's interesting if the steel is decent and one can clean them up and sharpen them properly and end up with decent knives. Not a bad deal!

They just get a sheet of steel that has a damascus look and cut the knife out of it, put the slightest edge on it and call it a day. It's absolutely crap, the steel is terrible, and isn't built for what it's being used for. If you use them in a domestic setting, you might get away with it, but use it in a commercial kitchen, they will break without a sufficient heat treat.

I made the mistake of buying two handmade knives on eBay from Pakistan in the beginning of my knife collecting, and it was the biggest waste of money and let down of a purchase I ever made. And you're right that the glamour shots of the product are always beautiful and pristine looking. One was a small triangular dagger (like a push dagger but larger) and the second was a bushcraft knife from d2. And the outcome was very similar to what you're showing there. Fit and finish was HORRIBLE, scales often mismatching and uneven, grind lines were terribly uneven as well. On the bushcraft knife all the same things applied except the grind was so poorly done that the edge has an S curve shape because everything was so uneven. And I didn't pay cheap for these two knives. I didn't learned my lesson after that. You can easily tell by the types of pictures of the product which ones will be garbage like the ones I got. They all have a similar style in their product shots and backgrounds so you get to quickly learn which ones to avoid. Personally, I avoided anything really custom made from ebay after that. Unless it is a will known maker than that's different. They're are many fabulous custom made knives but those are usually to be purchased from the maker's website directly.

Just to say; I did buy a set similar to these. About $100usd. Fit and finish is a bit rough and one blade is bent. However, I like than a lot. They look nice, the steel is good and with a little work I have enjoyed them over a year. I have wurstov, shun, cutco, and old high carbon knifes as reference.

It only takes a glance to see how shitty those are. Those look like a beginning amateur knifemaker made them. Let me guess, factory made in China? I wouldn't be surprised if they advertise them as being made somewhere else, or at least not say. Actually, anyone paying thousands for a set of knives is brain dead. If collectors and speculators weren't involved, no one would be selling knives for that kind of money. For that matter, there wouldn't be so many pattern welded blades being sold as Damascus, either. I'd love a real Damascus knife--but, because they're legendary and fairly rare, they're way out of most people's reach.

You want Damascus looks at a budget price? Get one of those laminated VG10 knives for 30$-50$ a piece off amazon. They do look pretty decent, are decently put together for the most part and have a VG10 middle layer wich is pretty nice actually, certainly a step up from the usual 1.4116 equivalent steels often used.

I recently got the Hexclad damascus steel Knife set and the quality and finish are excellent, got them on sale for $279 for 5 knives and honing rod. Knives are razor sharp, they look like more expensive knives.

Not ashamed to admit that I ordered a set of 1095 steel Kitchen Knives for my mother for Christmas last year and they all came with handles like that. They do appear to be 1095 steel, they hold an edge very well (haven't even needed to hone them) and came sharp enough to shave with so all in all, not a terrible buy (was about what I expected for the price) but I will be more careful in the future. What I ended up doing was using a belt sander to even out the tang where it was sticking out of the handle, filling it with 5 minute epoxy, and refinishing the wood (much like what you did). I'm no professional blade smith but I have a good degree of mechanical skills and was able to pick up a lot of techniques from Forged In Fire and am glad I was able to apply them in this case. Next time, I'll save my pennies for a few more years and get her a top tier set...or if I have my forge built, maybe make her a set. Great Video though. Cheers!

That's the plan as of now. Got the main forge body built, burner installed, got the anvil and tools...just need to find a place I can buy a 3' log from so I can mount the anvil to it for a shock absorber. Landlord said I can work on the concrete patio as long as I don't damage it and I'm worried that the shock from the hammer blows would travel through something like a metal tool stand if I put the anvil on one. I believe in the phrase "don't crap where you eat" so I'm being really careful not to damage anything I don't own.

@@allhonesty848 that’s sounds like a good plan and if the hammer strikes create to much noise , very good knives can be be made from annealed blade stock 1095 from Alpha Supply. That way just cut out the blade with a grinder with the cutting edge the thickness of a dime heat once in the forge to none magnetic and then just a little bit more and quench

My wife bought me a set of knives from this same exact group on Etsy. She knows how much I love to cook and how much I love a great chefs knife. If I knew these knifes was such low quality and very high maintenance I would have never bought one. No more then 10 minutes of cutting up garlic I noticed it was starting to rust almost immediately after setting it down. I wish I came across this video before having my wife purchase these knifes. Now they are going to be show room decorations. I’m very upset, after reviewing this video, I’m going to see if I can get a refund. Spent nearly 300 dollars on these and the blade is terrible. I spent 1 hour trying to sharpen my knife on 400 to 1000 and it will cut through paper. Just now razor sharp.

These type of knives are all over the internet. First only buy from a reputable seller. Expect to pay for quality. Don’t be afraid of Etsy there is some amazing products there, but if the price is too cheap there’s probably a reason. Great heads up. Thanks

If the steel is even lets say 3/4 decent :) ... Considering the low initial cost and the cost for local expert to fix them up? Might not be a bad deal after all?? Would have like to see a hardness check on each blade. BUT?? Just thinking before i comment, the blade quality is definitely going to vary widely for each set as well :( .. Probably why you didn't publish a hardness or flex test on them :) Great video!! First one of yours I've watched .. Subscribed!! :)

The last 20% takes 4 times longer than the first 80%. If you only get it to 80%, you can save a lot of time with an acceptable quality. For something that is probably selling for a couple hundred, there is lower expectation of quality and a greater need for quantity.

There are companies- mostly out of Pakistan and China- that are selling damascus knife blanks and billets in bulk for cheap. Usually they are a mix of A10 and 440 stainless- A10 is basically pot metal, and very often the blanks aren't even heat treated. I was gifted a damascus folder that was dubious quality so I did some research. I know my friend meant well and I haven't the heart to tell them they got ripped off, but it is what it is. They look nice and have pretty metal swirls, but the acid etch eats into the cheap A10 like it was made out of egg carton. If you can feel the edges of the two metals when they meet in the blade, it's probably not a good quality steel.

basic 10 dollar pakistani knife set. it is what you expect =D but you can get really good damascus stuff from china these days. xinzou brand for example has been same quality as yaxell or mac knives. way better than victorinox or arcos crap but similar price.

Interesting phenomenon. On Sweden's biggest second-hand trading site, I'd say that 90% of all knives advertised as "Damascus" are fake. Either because it's a scam or because a lot of sellers simply don't what a Damascus knife is. Things like... "Brand new Damascus knife - $30" Really? Or "I'm selling my 350-dollar Damascus knife for $45" Oh yeah, why?

I had a customer with a set of these. "American made, in Texas" but some how shipped from Pakistan. oh and get this $1,200!!! the steel was so soft it could be sharpened but you could roll the edge your finger nail, the the finishing was just trash. thanks for the video, great work!

I have got a hand forged Damascus knife that has some horrible fit and finish such as it having a recurved edge and bent blade what should I do to fix these issues it was a $450 knife and I don’t want a cause anymore damage that could have been avoided

I like to think of myself as a maker of sorts. I restore vintage hatchets and axes. I am propositioned on Instagram every few weeks about demascus knives. I've always thought the quality is extremely questionable. When the guys ask me if I want to buy their knives I just try to sell them one of my hatchets lol. My biggest reason for being so skeptical is because I've seen bend tests and the blades bent like we just got out of the stone age.

i put in those 3M filters ring from 1/2" plastic strip to space out the sides from the vent, then it feels like you have no filter on mask attached because you are using the whole filter and not just the middle. they put in them some spacing fibre but it will collapse pretty fast. would be better if the ring was from some mesh or something so you can use even the sides of the filter but it works for me.

They look like knives made in Pakistan. The Damascus steel is car fenders and truck springs. In the UK I bought a full set of Global chef's knives in a zip up case from a guy that came into my Inn office. I paid him £220 and later found out that Global don't make knife sets, or knives in cases. They were Chinese copy. They were actually a pretty good set, but not Global not Cromova 18 steel and not made in Japan. Here in Canada, I had a guy in Pakistan make a knife to my specs. It came rusty, had a deep scratch in the handle and there was no taper on the blade it, it was a slab of steel with an acutely sharpened edge. Lesson learned, I use it for opening Creemore Spring beer cases. 😅

The first thing I would say to someone considering picking up a cheap damascus set, would be. Stay far away from all the advertisements you see on social media with what seem like amazing discounts like 60% limited time sale ( the sale will never go away, and is how they lure in new victims). You can get affordable sets that are quality, but they will be made in China. Just make sure that the company website is not trying to hide what materials they use from core steel to the laminate steel (will usually be a VG10/AUS10/10CR core with 420J outer layers), and things like that. Or buy from trusted retailers since they won't take in those scam knives and deal with trusted OEM's. There are so many great Chinese kitchen knives on the market now from brands like Samura and so many others. If a deal seems too good to be true it probably is. And if you see these social media advertisements and do a search and all the google results are ads or promotional material it's 99% a scam. And all those short videos showing up have been paid to show them off, and probably also get kickbacks from sales since there more than likely will be an affiliate link in the description.

@Kelly Harbeson If it say it's damascus it probably is. Remember damascus can be made from pretty much any 2 steel combinations. Most damascus one don't see any or much patterns before it is etched ( one should see the lamination lines on the spine though). KAI is such a big company that I doubt they would lie about that.

@Kelly Harbeson Well I think a lot of people think steel costs way more than it actually does. Take Damasteel/Damacore for example, the most premium damascus in the knife business. It's a powdered form damascus made from PM27 & RWL34. But you can find a Damasteel blade on a $200 knife, but are most common on high end knives in the $700-$3000 range. It usually all comes down to build quality. And a large company can push out stuff a lot cheaper compared to a Custom maker or a product outsourced to a OEM

To me that grain direction looks bad to. Not sure if that really makes a difference with metal but with wood that would ;),make for a very weak product.

I have a cheap Xinzuo VG10 with Damascus sanmai. I grind away several mm of steel and it still has the pattern so it is real Damascus. The VG10 core is good and the finish quality is great. My only complain is that they should have thinned down more the knife. Cutting capacity is decent but not optimized.

Heh, I got 2 of the same knives. No complaints, eventually sharpened them myself and they seem to hold the edge well enough. And for Chinese knives they are not all cheap.

@@Xrayfk05 Don't get me wrong I do like Xinzuo, have seven knives from them and none came with any quality control issues. Edge lasted for a very long time. 6 months shaving sharp without any touch up until the edge rolled cutting pumpkins. Edge rolling sound bad but is actually good, proves the steel is not brittle and will not chip unless you abuse the knife. Considering its real 10Cr15MoV, 60HRC and real damascus very good bang for the buck knife, honest brand. My only complain is about the blade geometry, cutting capacity is good but not ideal. My favorite bang for the buck knife is Xituo "Bucher", it looks like a Bob Kramer. I did not test if Damascus is real but it has a deboss that avoids food sticking to it. VG10 core steel is good and blade geometry is excellent, it has better cutting capacity than most other knives I tested.

I find it amazing that someone would trust others to sharpen their expensive knives when it only takes a minute each. But yeah, looks like those "Damascus" knives were intended for the buyer to complete the manufacturing.

The sharpening stones and equipment can be expensive. A set of Shapton sharpening stones is around $300. Equipment like the belt grinder is $600+. The Wheel grinder is $300. Granted you don't need the best of the best equipment to sharpen knives but leaving it to a professional with this equipment will bring about better results.

@@KevinSmith-qi5yn I have yet to find "better" than hair-popping sharp, which I can do in 20 seconds per kitchen knife. I check them once a month, and if they don't cleanly slice paper it literally takes 20 seconds to sharpen them.

I tend to agree ... I've been using a hand stone and kitchen steel since I was 8 to sharpen knives, works great for the antique knives I use in daily kitchen chores (Single Dad of 4 here)

@@MikeBaxterABC An arkansas stone is hard to beat, but I think my cheap 8000 grit ceramic water stone works a bit better. I can take my Victorinox kitchen knives from "pretty sharp" to razor sharp in 20 seconds each. Sometimes I use my hard rawhide strop with 1-micron diamond to get them "screaming sharp". But that takes another 20 seconds each, and after preparing a meal or 2 most would be back to razor sharp, so I don't think it's worth it.

I've seen that set loads of times. When a deal seems to good to be true, it usually is. Better off with a set of old hickory for half the money, or a set of el cheapo henckell for that matter.

had a set similar come into my shop for sharpening but the steel was of such poor quality i refused the job, told him he should return his knives for a refund if possible. I didnt rockwell test them but a quick file test bit into them like they were made of butter and a spark test was negative too. sometimes you just see knife shaped objects.

I mean, if you have the knowhow you can salvage those blades if the heat treatment is good and finish the handle yourself, or send to a good bladesmith. Maybe then it's cost-effective?

My kids got me a Damascus chefs knife for Christmas from a local maker here in Ontario . I have used olfa knives every day for more than 30 years for work but the chefs knife is so sharp the first time I used it I gave myself 2 small cuts even being careful lol.

Amen to this video! The large majority of these damascus sets online are low grade cheap throw away blades. pretty much 95% of the damascus blades on Etsy are ripoff fakes. Even the hunter, bushcrafter and folding damascus blades are shit.

You can generally tell by sight which knives are garbage, and which ones are worth the money. Cheap materials, poor fitment, etc. Those scream Pakimascus.

for what the set costs, if the steel isn't garbage (which they usually are), I wouldn't count that as a scam... you're getting what you paid for - and it's something that can be brought up in quality with a little work.

TBH they look like knives that if you asked selled about hardness of their core they would never get back to you with answer. The little owner knows he/she would be better off with boring looking knives from Victorinox or Wusthof. I would ask owner to return them and settle for decent monosteel knives or educate them properly and let them choose from japanese blacksmiths. My only damascus cladded knife comes from Yoshimi Kato with SG2/R2 core and I got it with good price/looks/performance ratio in mind.

I have one chefs knife that was hand forged damascus steel and I paid 700 US dollars for it so if you pay less for a full set that’s the first red flag.

I have a friend in Pakistan who makes these! The tangs on these blades actually only protrudes about 1 inch into the handle, the rest of the handle is welded on.

The problem stems from the confusion over the definition of Damascus steel. Crucible Damascus vs pattern welded steels. Crucible steel with a Damascus pattern is great steel, but pretty much a lost art. Pattern welded steel that is called Damascus is not as good as the metal they put into it, and it can be really good steel or crappy metal. Damascus pattern welded steel doesn't really mean anything as far as quality. There is no real benifit to pattern weld steels and there are drawbacks. A modern good quality mono steel will be made worse by pattern welding. It will add to the construction labor and increase the price while introducing flaws and failure points in the metal. Cheap steel is cheap steel. Don't expect good metal for a really low price. I have seen cheap pattern welded knives that were so soft you couldn't put an edge in them because the metal crumbled away as you sharpened hit. It was sold as Damascus and if your definition of Damascus is pattern welded, they didn't lie. It isn't a scam, people bought into the hype of pattern welded steels. If you believe it makes a better steel, that's on you. Don't buy cheap steel and expect it to be incredible.

Idk. I've seen quite a few nice actual San mai Damascus (pattern welded) sets with vg10 or it's Chinese produced equal core. They are littered everywhere on AliExpress and the edge retention/overall quality is very nice. I'd still rather support local makers or at least no mass produced products but... I have to admit I've purchased a few in the 20-40$ range and they preform the same as any other knife in my repertoire as far as edge retention. Just give the pictures a good look and try to ascertain whether it's laser etched or if they advertise the steel as something it definitely isn't.

The thing that I don't understand is why they make their own lives so difficult. If they just made the handle out of one piece of wood (ok, two if you count both sides), there would be no gaps possible and it would be cheaper to manufacture. Same applies to the deformed holes in the back. No one needs those on kitchen knives, so just drop it and remove another source of error.

Its not just poorly finished knives that are the problem its the fake Damascus ones also that are flooding places like Amazon, I have been caught out a few times trying to buy Damascus knives but despite the page saying real Damascus on inspection it was clearly printed onto the blade, thankfully amazon are good with returns

They might look nicer now.... But the main problem was, and still is, the geometry. Those are still completely unusable in the kitchen. The big chef's knife still has the geometry of a butcher's cleaver.... Im not sure what your client paid you and how up front you were about the very limited effect your work would have on the utility of those knives. (steel, heat treatment, geometry, etc.)

Santoku is not a brand, it's the general term for a type of knife. "San toku" literally means "three virtues" in Japanese as such a knife is good for cutting vegetables as well as meat and fish or because it suits three cutting styles chopping, slicing an rocking. It's the Japanese approach on an all-purpose kitchen knife.

As a maker myself....a welding jacket??? Because of steel getting on your arms you said? OK then. To each his own I suppose. At least you're in Canada, eh? Try wearing one in south central TX. I promise that a welding jacket wouldn't have even been a consideration, steel particles on your arms or not. Those knives should have been thinned out behind the edge, but I get that the price your customer wants to pay to make them right will dictate exactly how much work you put into.
