Old timers are always the best in every food market ❤ some of these markets are also father son/ mother daughter operations that go on for generations if you look hard enough and ask the locals! I just love how this part of our collectively universal culture of food markets remains virtually untouched to this day.

Spices. It is similar to Indian fried chicken. But idk what they use tho. Maybe some turmeric or safron or chili powder on marinating. Even red food coloring i guess.
