Dark Souls 2 - How to beat the Fume Knight - Guaranteed to work

This was true for me as well, but with some training and some strategic advice he isn’t that hard anymore. From my first encounter (oh no, seems almost impossible at first) it took me about 10-15 tries to defeat him in NG.
Here is my melee strategy which will definitely work with a bit of practice:
1. Aim for high fire and dark defense to minimize any possibly taken damage (Black Witch Robe, Flame Quartz Ring +3, Dark Quartz Ring +3, Dispelling Ring +1, please see below for the full list of my equipment).
2. Try to have a high adaptability / agility for rolling under his attacks. I prefer a good adaptability for my character during the whole game anyway. The Simpleton's Ring will increase it further for this fight (and will make a nice invisibility effect while rolling). This all has the purpose to get a longer time slot of invincibility during your rolls, please see invincibility frames keyword in the wiki.
3. Use a powerful and fast weapon if possible - of course this will depend on your character build. The Red Iron Twinblade +10 is pretty effective against the Fume Knight compared to many other weapons.
4. Equip Velstadt's Helm for starting his 2nd phase with his buffed sword immediately. His buffed 2nd phase sword (Dark AND Fire) is really powerful but otherwise his moves are a bit more calculable and are also a bit slower in the 2nd phase compared to his double wielding style in phase 1, so I am skipping his phase 1 completely with the helmet. (This is because in life Velstadt defeated Raime and only seeing the helmet of his old enemy is enough to bring him to the rage of phase 2 immediately.)

5. Buff your weapon with Aromatic Ooze for extra magic damage at the beginning and repeat if you have enough time in the fight to do so (although it can be quite hard to get this extra time later on).
6. For most of his sword attacks, try to roll slightly to the right and behind him. After his second (or sometimes third) sword attack, if you have managed to roll behind him, use the small window of opportunity for an attack.
7. Only exception for this kind of roll would be his delayed sword sweeping attack with his buffed and absurdly long ranged sword, which can be very annoying due to its delay and its long range. In this case, try to roll to the left, into the attack, but exactly at the moment when he starts the sweep - the exact moment will need practice of course. After the sweep, if you are behind him, is one of the best opportunities on Raime for an attack, a double attack or healing if needed.
8. If he stabs the sword into the ground, run away from him. Then wait for the fire orbs to appear and try to roll into a gap between two orbs.
You can pretty much see all of these tactics in my video. In the middle of the fight I lost a bit of concentration and had to take some hits, but nothing what could not be handled.
