Just looked up the origins of the term "ma'am". It actually comes from the old french word, "madam", which does have some polite and respectful definitions but it also describes a woman who runs a brothel.

As an American, I always found "Dear" to have a very personal meaning. For instance, I'd use it to open a letter to a family member, but not a boss or colleague, for instance.

"Dear Mr President...". Never, "Hi Mr President...", or, "Hi Manager..." It's formal to use 'Dear', at least as per the rule books; it's used in institutions and academia, or formal applications etc. "My Dear Sally...". Now, that's personal.

'Tipping in America" - I despise it! Europeans do not subscibe to it and it is horrific that a patron is beingobkligated to pay a living wage that best belongs to the employer! Despite the contention to the contrary, that certain employees are 'independent contractors', it is outrageuous to serioulsly believe that any establishment would do without their service personnel in the conduct of their businesses.

Well then U. S. restaurants need to do something called a salary increase. And some Euro countries do they just include it in your amount
