What a beautiful pan set! One day this or the corsair will be boiling away all Feb/ March in my side yard. until then an old wood stove with foil pans on top it is. My wife said I can buy whatever I can afford from selling the syrup I make. Let me tell you, making a gallon my way IS daunting, lol.

Erdrick Sword, Just finished the season with my Dauntless using a flat pan not the one in the video. Very happy! Easy to move in and out of the barn, set up etc. As a first timer, we were getting easily 11.5 GPH and used very little wood for our last 40 gallon boil. Perfect for my 45+ taps. Looking forward to next year and pushing it a little harder. Smokey Lake is the way to go.

Have you ever installed a sight glass on the feed pan, just as an additional visual aid to monitor the sap level in it ?

Absolutely! And its always important to clean them off every here n there to reduce the soot buildup underneath! Nice video, I'm going to invest in the dauntless, just flat plan. I wonder how many years this arch will last? Any thoughts?

Is it bad to use well-water for test boil? You made a point to mention you were using mineral-free permeate. Thanks.

Not really bad at all. It may, depending on the mineral content of your well water, leave some spots as you evaporate it. This is, by the way, EXACTLY the same as the sugarsand deposits you'll see with sap. Same thing.
