The thing with Karelian pie is that its protected product. Dont know how well i can explain this, but lets try: Theres a protected recepe for Karelian pie, which has to be used exactly like in the book or else you may not distribute them with that name if youre an owner of a bakery or a groceryshop. Its kinda like a protected trademark. The bad thing with that is, you cant make gluten/lactose free Karelia pie and call it that. So most of the times its called a rice pie.
@trumpjongun88315 жыл бұрын
Dough of Karelian pie has a lot more rye flour than dough in Rice pies. That's the biggest difference and real Karelian pie is much better. Atleast 50% of flours have to be rye flour, then it's real Karelian pie. Rice pies from a food stores are pretty bad.

I dont know if you will anymore read this but for karelia pie the traditional way is to put eggbutter on top of it and warm or cold, but also I like to treat it as a bread and just normally put meat, cheese etc on it. Also warm or cold. Also the meatpie/lihapiirakka is more of hot food. Yes you can eat it cold but most will eat warm and maybe with ketchup or split the pie and put meat/cheese in the middle. So there is many ways to enjoy them and you should definetly try. There is one food called grahaminpiirkka which is pretty similar to lihapiirakka but worth the try. You can eat it the same way hot/cold and with extra stuffing or not. :)

Congratulations! 🎊🎉🍻 A little history on karjalanpiirakka: in the olden days people used to make those kinds of piirakka with any kind of porragey fillings, mush potatoes being one of them. Rice used to be fancy, costly, imported stuff. Soooo if you wanted to make fancy karjalanpiirakka for guests or celebrations youd use rice to show how wealthy you were. (Similarly riisipuuro=rice porrage is eaten to celebrate Christmas) For normal everyday meals mushed potatoes or normal porrage would be used. Nowadays we think karjalanpiirakka=riisipiirakka because we wanted the fancy version to be the official kind. To sum it all up the perunapiirakka is the more traditional one. And youd eat it hot with atleast butter to not make it too dry. Fun Finn fact: youd make a whole ton of piirakka at the same time and afterwards for meals youd eat...not karjalanpiirakka. But sultsina!! Its like a kind of finnish tortilla. Youd use some of the piirakka-crust-breads and fry them on the pan and fill them like tortillas. Except the filling would be the leftover porrage. Yummy! (Karelian kitchen used to be mainly porrage and meat and a ton of butter, you know, stuff that clogs your arteries)

Those salty pastries are tasty cold too, but I recommend heating them up in oven or micro! Especially Karelian pie. 30 secs in micro then thick layer of butter ontop :D Ketchup goes really well with lihapiirakka, some like mustard as well. Since piirakka dough is 90% butter/fat, heating it up will make it juicy and not so dry. Dallas-pulla is my favorite too! Did you know you can get it as "pitko" as well? A long pulla with looots of the tasty filling! They are usually in the area with other pre-packed cakes. I have to say I am amazed you have not tasted Finnish voisilmäpulla before this. It's like the grandma of all other pullas and very easy to bake at home :)

You missed the cardemon bread or rolls with lingonberry, rasberry, or strawberry preserves. There's also rieska bread that's good with anything.

You should DEFINITELY try Fazer's kristallipulla (crystal aka vanilla) and pistaasipulla (pistachio), those are delicious when fresh out of the oven...
