For years, people have been telling me I need to experience the Indian food scene in Manchester, New Hampshire. I finally got the chance in the fall of 2021 when I linked up with my friend Chef Keith Sarasin to go all-out with a 24-hour eating tour of New Hampshire’s largest city. Let’s go!
We’d be hitting up two restaurants and then have dinner at his house later! Our day began at Taj India Indian Cuisine on Elm Street, which is known for its amazing food scene. The city is also known for its craft beer scene!

We started with chai, which was hot, frothy, and rich in cardamom. Then we ordered their lunch special thali, lamb samosas, and two curries and went into the kitchen to watch them prepare the stuffed chicken naan, samosas, aloo tikki, malai kofta, and thalis.
At our table, we had a huge spread of rice, chana, subji, veg pakoras, chicken tikka masala, garlic naan, chicken naan, aloo samosas, fish tikka masala, veg korma, and malai kofta. The samosas were great with the tamarind chutney.
I also loved the subji, and the chana had a nice sweetness and earthiness to it. The veg pakora was crispy and also paired well with the tamarind. Next was mango lassi with pistachios, followed by creamy chicken tikka masala with garlic naan.
The stuffed chicken naan with the veg korma blew my mind with its textures and flavors. It was great with the fish tikka masala. The dumplings in the malai kofta were unreal!
Then, we drove to see the Merrimack River and then drove to Annapurna Curry & Sekuwa House for some Nepali food! In the kitchen, they made us some mattar paneer, chili chicken momos, chicken chow mein, and garlic naan!
At our table, we started with the chili chicken momos. They were fried, stuffed, vinegary, and had a nice tingle to them. It was a great mix of Indian and Chinese flavors! The garlic naan with the mattar paneer was also creamy and excellent, with peas and massive paneer cubes.
The garlic naan was outstanding! I also really liked the thick chow mein noodles and all the spices in them. The heat level was rising and I was starting to sweat! We finished with some breath fresheners.
Then, we drove to Kelsen Brewing Company about 15 minutes outside the city. I couldn’t wait to try their award-winning Paradigm brown ale! It was the best brown ale I’ve ever had-very crisp and not very malty.
Finally, it was time to head to Keith’s house, where he made me a Hyderabadi lamb biryani. He washed the rice and placed the spices in a pouch and put it in the water. I added a bit of rose water to the water.
The lamb was so fresh and tasty! Then, we added saffron to some warm milk. Meanwhile, the rice was so fragrant. Then, he began layering the lamb, caramelized onions, crispy onions, and saffron milk.
Finally, I added the last layer of rice and flattened it, and Keith added more saffron milk, cilantro micro greens, and a pinch of salt.
The lamb biryani was so aromatic and had my mouth watering. We had some mirchi ka salan on the side, which is a curry made from coconut, curry leaves, and sesame seeds that pairs well with the biryani.
Eating it together was unbelievable. The fatty lamb was amazing and the sweet caramelized onions were a game changer! It was so unique, and the mirchi ka salan gave it a nuttiness I loved.
Finally, we had mango lassi cheesecake for dessert! I loved the creaminess and the ginger snap crust. The shredded coconut barfi on top made it extra decadent! I couldn’t believe how great it was!

Keith said it at the beginning itself. Atleast in Winter it's all gingerrry , garliccy and chilly ( culinarily and weather wise) 😉 That's our way of keeping warm through food ! This Year winters in Delhi are going to be chillier literally 🤞

Make this a series please, you guys are the best pairing around. Whoever thought of getting you guys to meet up was blessed. My vision of a channel for you both: Go explore a culture, taste the food (as you have been), get some ideas together and make something special at home (based on what you experienced). Similar to what you did here but expanded :)

Chef Keith you have blown me away with your knowledge of Indian food that Biryani so authentic and was salivating the whole time. That mango Lassi cheesecake with coconut crust on top so unique and looked so yummy don't know why no Indian ever thought of that. Boss I have become your fan. On your Next trip to India,Please visit Andhra,Coastal Andhra, Konkan region,chettinad, uttarakhand,Interior karnakata etc. Union territories like Pondicherry, Lakshadweep etc..Hope you explore more of India David..Indian food much more than Naan, butter chicken, panner and samosas 😊

David, I am truly thrilled the way you respect food and have it the original way. This shows how good a person you are. Just to add there are numerous reasons for eating food with bare hands; you know the right temperature to eat, your stomach is encouraged by brain to get the right enzymes rolling, our finger tips have some of the food digesting bacteria to start the digestion and many more.

I think 80% of restaurants serve the same kind of food and have similar menu which is North Indian food.( Mostly Punjab). There are other regional Indian cuisines with different vegetables, meats,whole grains and pulses.Eating this kind of Indian Food on regular basis is not healthy David. I Love your vlogs though 😊

@@kg6071 people of punjab don't eat this type of food daily. it is restaurant food .people don't even have tandoor in normal homes in punjab.it is not unhealthy but calorific and heavy.there are too many dishes to eat morever butter chicken and dal makhni are delhi dishes not punjabi traditional

Yeah Shilpa, even I have noticed the restaurants in USA have limited food on the menu. Indian food on a whole is so vast like each state with its own dishes. I have also wondered if there's any restaurant providing Gujarati or Marwadi food. I have barely seen authentic Kerala or Tamil food being shown in any of YTubers from USA. Just one person showed Saravana Bhavan veg thali, which was average in my opinion

@@Anmolnegi-yw7hg so what other dishes other than tandoor roti or chicken tikka masala, Dal makhni or butter chicken is usually had in a typical Punjabi lunch or dinner? My Punjabi friend she used to usually almost like every other day bring chapati and paneer sabzi. Forgive my ignorance.

well, I came to know a fact about "Besan" recently that it is the only flour that can be shaped or made/cooked in any texture you want due to its certain molecular properties.

So, in Spanish you have picante for spicy hot and caliente for heat hot. English doesn’t do the distinction well but Mark Wiens hit it on the nose recently when he described food that is beautifully spiced but not hot as spicious. I’ve added it to my food vocabulary.

Momos is it that the word itself has been derived from Marathi ( Maharashtra - India) word MODAK . The stuff shown here exactly resembles that.

I just went to Taj India and did an online order. Love the Chicken 65 and the samosa chat. I loved the hot spicy shrimp tandoori curry and chicken biryani. The onion kulcha and garlic naan are fantastic!!!!

The two crazy 1/2 Desis took all Desis hearts by storm! Bringing Kewari food was a good mix, though besides for Momos everything else was Indian if I'm not wrong🤔 The finale of Biryani and Mango Lassi Cheesecake destroyed all the other dishes tried! Keith "Atma" is a great name to go with. Tshirts barring Indian names are a tribute to Indian cuisine! Respect...Love ya! Dhanyawad🙏🙏

Correct me if im wrong i think besan is pronounced BESEN. In my household anyway the a is not pronounced its more of an E. Also would love to see you try Village type meals like Kadhi Chawal or Rajma Chawal. Keep up the great work.

Keith is more Indian than many Indians. @Keith: Do consider moving to India and opening your restaurant in a metro city like Bangalore or Pune with lot of foreign crowd. Man, I will come to your abode every now and then. That Biriyani is dope man ! Looks way better than Behrouz or Biriyani by kilo

Keith..i really touched..want to send heartiest best wishes..as you choose name "Aatma"...(soul) Show how deeply you attached with indian culture..not only food.. People generally don't realise.. 8ndia 8s just not a name.. It's world oldest civilization.. So..only civilization which believes in.."eternal life of Aatma...which never dies....which take body..like any dress..live in that..for 50-60-70yrs..thn dies(discard that body) chang to new body.. So in Hinduism..."Aatma" is most important... So wen I heard..your restaurant "Aatma"... I noticed how deeply you attached/linked to indian culture.. Blessings n love from india 🙏🇮🇳
