"В" and "на" can both mean "on" in time with the accusative case. What is the differnce? Do we use "в" for days of the week and "на" for everything else? Or we only use "на" with accusative for talking about a time period following an action, as mentioned in the "Prepositions and Time Expressions in Russian " video and the other things need other cases and/or other prepositions?

Yes, в + accusative for days of the week, на + accusative for a period following an action (Она уехала на лето = She left for the summer). I always hesitate to say "for everything else," but this might be handy as an overview: в + acc. for periods of a day or shorter (в субботу, в этот день, в эту минуту), на + prep. for a week (на этой неделе, на прошлой неделе), в + prep. for periods longer than a week (в феврале, в этом году).
