maybe take a look at some other products labels and how the allowed leeway in the grams of things can lead to calories not adding up especially in per serving size if the serving is just few grams (the calories themselves have a bunch of leeway too). like how you can use sugar as a packing agent for a sweetener and be '0' carbs.

Well, she didn't actually "Replicate" the flavor as we don't know what "Spices" were used and she doesn't have the actual sauce to compare it to, but she debunked the claims against the ingredient list since dragon fruit tourns out to be an emulsifier. Great Job Ann!!! ;)

@@micro2743 I know, but i'm sure she came pretty close. If you know your flavours like Ann does then i think most sauce recipes are gonna be pretty standard, especially when most of the customers described it as ranch-like. That should have been more than enough for her to work with

I get your point, but what she did is not proof of being a food scientist. I'm not a food scientist and even I know how to make an emulsion. She just did some basic experiments that anybody claiming to test the ingredient list should have been able to do. What Ann didn't mention is that Alley (the girl who went on the talkshow) actually found glitter in the pink sauce. The talkshow then later was totally set up to make Chef Pee look like a victim of internet trolls and haters, who didn't want a single, black mother to succeed with her business. That clip that Ann showed wasn't even the worst part of the talkshow, the host totally going at Alley was something else. Said host later deleted the show from his channel, but there are enough clips around. It was also quite clear that Chef Pee simply couldn't handle the business part, hadn't really looked into food safety standards and seemingly considered her first group of paying customers her test subjects. Since then she partnered with a condiment distribution company that now produces and ships her sauce (which probably is a good thing).

I think the question shouldn't be "is she a chef?" but "does she have a food handlers card?" "is she abiding by cottage food laws?" "is she abiding by commercial food manufacturing laws?" "has she consulted any qualified nutritionists in the creation of her label?" "has a third party verified her ingredients list?" bc if all it takes to be a chef is having a friend who wants you to cook for them, "chef" is not the qualifier we should be using to see if someone's mysterious homemade sauce of unknown origin can be mailed over days in the summer heat.

Sauces like this DO NOT fall under cottage food license protection. She most likely didn't have one, as you have to pay to apply, you need to provide official documentation about your kitchen, the foods you'll be making, and they have to send an inspector out before approval. When I worked for Starbucks, I would put a scoop of dragonfruit into my vanilla bean frapps just because it made them such a beautiful color. Looking back, it definitely stabilized the beverage. The information that dragonfruit acts as a stable emulsifier along with the information that its colour fades in a few days really does seem to fit well with the ingredients list - assuming Chef Pii provided an accurate ingredients list, it sounds like these findings are consistent with that, and if that were all there were to it, I think it would mostly end there. HOWEVER.... We do know the label has some accuracy problems with the number of servings vs. the serving size, the nutritional information, spelling, and so on - Chef Pii (or someone in her employ) seems to have been LARPing as a nutritionist, and if these results are anything to go on, one can be forgiven for looking at the ingredients list with suspicion! And, given everything else we know about the Pink Sauce fiasco - the initial packaging/shipping disaster and professional concerns, for examples - I think we have a pretty good idea of why Chef Pii never seemed to take the time to explain that the colour shift was normal for dragonfruit: I'm going to assume that the product research and development, testing, QA, etc. was probably going to be as shoddy as the labeling, packaging, shipping, and so on, and Chef Pii was probably as surprised as anyone when the sauce didn't maintain its natural colouring. Handwaving that sort of thing as an "I'm not perfect" learning curve seems to be part of her SOP, and there seem to have bigger fish to fry in doing damage control and so on, so I could easily imagine that figuring out why the colour was inconsistent and explaining to her customers that it's normal was probably not high on her list of priorities. Those criticisms aside, along with the fact that there's no way I'm going to trust my life to a queasy pink mail-ordered food from a TikTokker, I am impressed that Chef Pii did at least seem to be responsive to complaints about the leaky and damaged packaging, seemed to deliver every order as faithfully as she could under the circumstances of her limited experience and expertise in this sort of thing, and provided refunds or replacements to customers when prompted - that's not the worst customer service I've ever heard of, and would probably put her ahead of the curve for Kickstarter reward fulfillment (for example, where Kickstarter reward fulfillment is notoriously spotty, especially toward the seedier side of the amateur contingent of that platform....)

@@kumaahito3927 It does depend on the field. I find it's usually history channels who have a *very* specific niche that they cover are worth watching. By contrast you had Mattpat do a 'Viking vs Samurai vs Knight' history video which got torn to shreds by basically anyone with any sort of historical knowledge by the sheer amount of faults it had in it. At first he just thought it was people being butthurt over the Knight losing but when more and more false claims got shown he then switched to "oh it had to be rushed because we were at a deadline...we didn't have time to do proper research". Here's the thing, with Game Theories, nobody can really 'fact check' you because they're gut feelings but when it comes to 'Historical theories' he can actively get checked because there is a wealth of knowledge out there and there ARE people who make a particular era of history their specialty. Since that point Mattpat has never done any video based on actual history again because he couldn't just bullshit his way out of it with the "It's just a Theory!" catchphrase.

I’m a food safety inspector with a county health department here. Our food safety program permits food service, processing, and storage facilities and follow requirements that are state-wide and are consistent with the 2023 FDA Model Food Code. Private chefs do not require permitting where I am. They are using the kitchen, and sometimes food, provided by the client. They aren’t operating in the scale of a caterer and do not have do any preparation at a separate location. Everything is prepared on-site in a home for a client and sometimes their guests. It’s very small scale. This sort of thing doesn’t require a permit or any sort of certification (again, where I am located) but the client could certainly ask that they have some sort of food safety training certification. She mentions that she is RAMP certified but didn’t mention any food safety certification, so I would assume she doesn’t have one. The production and bottling of the pink sauce would require some sort of permit, probably from the state out local health department. But honestly this sort of operation has very little risk of food borne illness, as the final product will be acidified to the point of being shelf stable. Speaking for my department, we would require that the bottles either say they require refrigeration or that she submit the product for testing at a lab to verify the acidity.

From what I remember the reason people were concerned about The Pink Sauce ( I Saw Swell Entertainment's video on it) was how the Pink Sauce was being shipped. It was not refrigerated and was being shipped out in a heat wave and looked as if it was being stored in a garage. Many of the early bottles that people got were gassy which was a sign that a possible bacterial reaction . A few had exploded and were clearly rotten. That seemed to be the main reason people were urged not to buy it or eat it that I heard. I also found it alarming that someone was selling a food product and didn't understand that by selling food they might have to answer to the FDA ( FOOD and Drug administration).

Now all Ann has to do is taste the og sauce and compare it to hers. If it tastes similar then we'll know for sure that the pink sauce is used only with the ingredients on the bottle. Or if someone else would like to make Ann version and compare to teh og sauce then that will be perfect. So basically Ann could have created a whole new recipe and Pii can easily take it and pretend she was making that all b4 since Ann's vid I'd out. And because i'd seen multiple lies or negligence on her part, it was easy to think that she had done other lies or negligence. I still don't trust her, even more so following the video she filmed of herself having a supposed fda officer show up at her home (which sounds unlike anything i know the fda to do), and the questions felt off and she was allowed to film it (i don't know the privacy laws of her state and whether you need 2 party consent or just 1), and she even had a sparkle filter on her (tbf, i don't know if it was a video she'd already started and was interrupted by the doorbell). That's incredibly boring and not share-worthy. On the other hand people who jump to conclusions get more clickable videos out quicker and those get transmitted further out until noone knows what the source is but the information has been repeated so many times you have to just assume it's true because why would people be faking their death over it if they stand to gain nothing from it?

Happy with this review. I work for a leading consumer health company on formulations in regards to labeling. The pink sauce label made me cry. I guarantee she never made her FDA submission prior to marketing, which would have identified the GROSS mislabeling which for anyone else would have triggered a major recall. Great and knowledgeably experiments too. Terrible product, but lots of misinformation as well. It is on Walmart now with a corrected label. Lots of stuff left out from the first one... and it has artificial colorants with TiO2 and artificial preservatives.

I was just reading through the recipe on Ann's website and she said that it fades over the course of a few days into more of an apricot color, which looks like it might be closer to what Dave's is selling. (On my phone, it looks like it's a slightly pinker version of thousand island dressing, so close to an apricot color.) Maybe that's the issue? It seems to me if you want the hot pink ranch you'd be better off just using Ann's recipe and making it fresh in small batches to use up before the color starts to fade, rather than purchasing the already-faded store version that defeats the purpose.

I've seen it so many times, I actually have a script as to how to apologize for doing this as someone with ADHD xD that was Chef Pi's mistake. She just kept doubling down instead of taking a step back, looking at the situation, & saying "sorry guys, this is going on hiatus until I have things sorted! everyone who's order was messed up, email me & you'll get a refund" before settling down to make an actual plan like a mature adult. Her patches were required to be shipped with dry ice and she didn't, causing her sauces to go bad during shipping. Her shipping process was never fixed, at all. You got that one wrong. Also, personally if someone is making a food product and doesn't know they need to go through FDA regulations to bring it to market then this is a person who doesn't know what they are doing and putting people health at risk. Basically, you’re correct in saying that Tik Tok is a very bad source of information unless the person making the video is a professional and even that’s not a guarantee the info is good since, again, any video can be only a min tops and has to be attention-grabbing enough to pop up on enough people’s For You page.

@@pfifltrigg Idk if this is the case or not, but the discolouration _could_ have been caused by the pigments in the dragon fruit breaking down or oxidising. She personally said she didn’t need to follow fda standards because she wasn’t selling a drug. She also knew the serving amount was completely wrong. She thought it was cute because it’s the “angel number” whatever that means. All of those things combined to make it seem she had no care for the safety of her customers. Second she’s extremely mean. Reacts with anger and condescension to any kind of critique no matter how helpful or reasonable. Third children are a large base on tik tok and they don’t have the critical thinking skills to make fully informed choices. And fourth she’s a black woman getting successful and no matter how many legitimate criticisms there are it would be ridiculous to pretend that isn’t a problem for anyone. So ultimately I think it’s the same outrage people would have if a roller coaster with no safety features opened up and the owner said “well no one has been hurt yet and I don’t run an amusement park so I don’t need to follow amusement park standards.” It doesn’t affect me at all. From what I could tell you eventually the fda would have likely independently investigated into the matter or another customer or food scientist would had summited it for review. It would had not been clear for national sale. There is this loophole that online foods may not be regulated by the fda because it’s under the discretion or review of the department of Health and Human services in the state she was operating / resident of. Of course it still have to be evaluated due to its unique color and the process. We are required to report dyes , common food allergies like egg, milk, soy etc. bacterial contact and assessment risk for possible contamination risk. So I think a lot of people were mad at the first shipments having damage or will this kill me because I have a soy allergy or dye sensitivity etc. food science or culinary classes in the us is rarely taught to minors unless you attend a school that may have it at some compacity to learn before university or at a school like Le Cordon Bleu. Even the consistency of the sauce done by Ann is not the same as the initial sauce Pii was sending off.

The reason everyone just dumped everything into a blender and blended it all at once is because that’s how pii showed herself doing it on her tiktok page. she didn’t emulsify or measure anything so plenipotentiary had to guess the quantities and then made it the same way she did

Well I mean (and I'm saying this as a neutral party, this is the first time I'm even hearing about this pink sauce) but like a KFC ad would show spices being thrown on chicken and then it turns into picture perfect fried chicken, they're not gonna show you the step by step way to replicate their product. Of course I haven't seen the video, to know if she meant for it to be instructional or like click bait

Yeah I was thinking that watching Ann's video. You can argue that it might or might not be Pii's fault that her pink sauce "tutorial" was her dumping and blending everything together, but I feel like everyone who've attempted to recreated and who aren't professional would've look at that video of hers first

I don't like matpat. His preposterous hypotheses lack proper proof, tend to be easily disproovable and sometimes are just plain stupid. All he does is take the most controversial stand point at any discussion. This is especially agreegeous for people in fnaf community when they hear someone say that "Scott only confirms mattpat theories" because there was only a single case of that happening and matpat preposterous hypotheses are pulled out of his ass.

@@tsurian99 also IMO, because of his film/game theory roots where he presents cherry picked things from media in order to spin a narrative (eg Mario is the villain of the franchise) he doesn't tend to admit his biases *as often as he should*. Probably cos in the Evil Mario case, it doesn't matter if he skipped over some other points cos it all is 'Just a Theory' in the end with no real life consequence but I'm concerned with this being his same attitude to the real life things he presents on Food Theory which if he presents them as facts and doesn't heavily mention that he might be wrong, can lead his millions of viewers into taking his word as fact.

I mean... "make her own nutrition facts label and Photoshop." You know the FDA doesn't create your label for you right? That's the product manufacturer's job. The FDA merely creates the guidelines manufacturers must follow when creating their label. Lying on your label is definitely a very real issue, and she shouldn't be doing it for any reason, but what might seem like malice on her part, is likely just stupidity/mistakes in her understanding of how the calculations work.

@@psychonauts0 I don't know much about this pink sauce or anything else about it, and frankly I don't care, but this was a bad take. It's a mistake if she knows how to do it and messes up. It's a wrongdoing because she would obviously know she doesn't know what she's doing, but still chose to do it anyways. You would know whether or not you can do an accurate label, and if you know you don't know how to do something important like this, doing it yourself anyways is a bad thing to do. If your logic is applied to other things, there could be some very serious consequences

She opted not to care if she doesn't know what the hell she's doing, regardless if it harms her clients or not. Once you're an adult, it's your responsibility to know your supposed craft, especially if you're selling it for actual money. This whole situation showed me that whoever this vapid, entitled, victim-playing woman is, she doesn't know how food works, what bacteria is or who Pasteur was. I wouldn't want to be operated on by a surgeon that's in fact a random corn farmer with a scalpel in his hand and I wouldn't want to eat food by someone who's either undereducated or simply stupid enough not to know how food works.

When confronted in an interview about customers being upset about the quality of the sauce, her response was basically "Well, they still bought it/I still got paid." She doesn't give a shit about her customers, she just wants to make a name for herself and get paid.
