Sour Cream Coffee Crumble Cake
This coffee cake recipe is delicious. The sour cream makes it extra moist and the crunchy crumble topping as a perfect texture.
Make the recipe in two steps, first, make your crumble topping and refrigerate it while you prepare the cake.
Coffee cake does not have coffee in it. Coffee cake is a breakfast cake that is enjoyed with coffee. Espresso cake is a chocolate cake that contains coffee.
For the Crumble:
Recipe:
Ingredients:
3/4 cup- flour
2/3 cup- brown sugar
2 tsp- cinnamon
1/2 tsp- nutmeg
8 TBSP- cold butter
Method:
Add all of the ingredients to a mixing bowl and mix on med high speed until the mixture comes together. The butter will be in chunks, that’s okay.
If you do not have a mixer, you can use two forks to blend together until the butter incorporates into the mixture.
Refrigerate the crumble until the cake is ready to be topped.
For the Cake:

Ingredients:
1 1/3 cup- flour
1 tsp- baking powder
1/4 tsp- baking soda
1 tsp- salt
8 TBSP- Butter. Note: Most sticks are 8 TBSP or 1/2 cup
3/4 CUP- Sugar
2 each- Whole eggs (room temperature)
2 tsp- vanilla extract
1/2 cup- sour cream
Optional- slivered almonds.
Method:
In a mixing bowl, add the flour, baking powder, baking soda and salt. Mix and set aside.
Using an electric mixer, combine the sugar and butter and mix until smooth.
Add the eggs and vanilla and mix until smooth and creamy.
Add sour cream and mix again over low speed.
Add the flour mixture and mix over med-low speed. Do not over mix, small lumps are okay.
You may add a bit of milk if the batter is too thick. It should be thick, but not runny.
Line a 8x8 baking pan with parchment and coat with cooking spray. The parchment is not necessarily needed but helps to remove the cake from the pan cleanly.
Add half of the batter to the pan and spread evenly.
Add half of the crumble mixture, then spread the rest of the batter and top with the remaining crumble. Top with slivered almonds.
Bake at 350F for about 35-40 minutes. Ovens vary, use the toothpick to test for doneness.

Great idea fora Sunday morning. Like the use of almonds on top. So, I wondered if you ever tried almond extract in the cake, instead of vanilla. I enjoy using nuts in my cooking and baking, as much as possible.

@@FoodLust pecans from my grandmothers trees, for the holidays, was always a treat. Pecan pie was my favorite. Cookies and sticky buns were more commonly baked.
