Mushroom Stuffed Chicken
This Mushroom stuffed chicken one of our favorite chicken dishes.
The chicken breast is the main ingredient, and would recommend the best organic chicken breast you can source.
You can use any ingredient you like to make this recipe specific to your taste, but this is our recipe.
Recipe:
Ingredients:
2 each- large chicken breasts
1/2 cup- bacon, chopped
1/2 cup- onion, diced
1 cup - mushrooms, chopped
3/4 cup- grated Guyere cheese
3/4 cup- chicken stock
1/4 cup- parsley, rough chopped
Salt and Pepper
1/2 cup- cream
For the rub-
Garlic powder, smoked paprika, Italian seasoning, salt and pepper
Method:
Saute bacon, onions and mushrooms until onions are soft and bacon begins to crisp.
Add salt and pepper as needed.
Add half of the chicken stock and reduce until the liquid evaporates.
Add parsley, stir and remove from the heat.
While the mushroom mixture is still warm, add cheese and mix thoroughly, as the cheese melts, it will be the binding keeping the mixture together.
Slice chicken breast down the center making a pocket, slice the sides of the pocket to make a larger pocket.
Rub the chicken with the dry seasonings.
Pack the mushroom mixture into the chicken pockets.
Bake at 350F for about 30 minutes, until the internal temperature of the chicken reaches 165F.
Remove the chicken from the pan.
Reduce the residual drippings and stock until slightly thickened.
Add 1/2 cup cream and continue to stir and reduce until you have a smooth sauce.
