I have always shunned making coffee cakes because of one dry disaster decades ago. Then my husband whined and whined, and I relented and started searching. I wanted a soft coffee cake with the cinnamon and nut topping, and after an afternoon's search, I decided on this one. Bingo. Perfect. I left out the chocolate, and also used a glass 9 x 9, greasing and flouring it. Fifty minutes later, deliciousness filled the house, and my husband said this was worthy of being sold at Starbuck's (his favorite coffee house). Success! Thank you so so much! I'm sharing this recipe!

Cake flour is a low gluten flour that gives cakes a soft and tender crumb. It really depends on the cake whether you want to use cake flour. Some cakes you want a little more dense so they can support fillings and frostings. You could try using cake flour in the coffee cake.

I made it in a loaf pan. I had placed extra butter paper and folded the extra upwards, so that it sticks out. It helped me pull the cake out. It turned out perfect. Thanks again :)

I love making this recipe! I recently substituted the yogurt/sour cream (since I was out) for buttermilk and it still came out perfect! I have also used a bundt and square pan as well you just need to watch your baking times since it does bake rather quickly. Thanks Stephanie!

I baked this last evening and it was yummy good! So moist and exactly what I was looking for in a coffee cake so thanks Stephanie! Not over baking is key as is not to over mix. Follow the instructions exactly. I ended up using a bunt pan and it worked out just fine. However next time I make this recipe I will make extra crumb filling and I will invest in a springfoam pan as suggested just to see the difference.

This turned out great; thanks for posting! Only thing I did different was omit the chocolate chips; never have seen chocolate chips in coffee cake before and it just seemed odd to have a chocolate and cinnamon taste competing against each other.

I agree I wanted to omit the choc chips but thought maybe it would be good. No choc chips are not good in this cake at all. I'm sorry I used them. I added some lemon zest to nuts and it was really contributing to better taste.
