I commented before I saw this. Believe it or not, this has happened on quite a few videos (4 or 5, if memory serves). I have watched almost every vid you've uploaded, and actually thought it was intentional; actually was getting frustrated, because the detail (and love for the community) given on "Deddy's Kitchen" is unmatched and well appreciated. Thought you were going the way of most of the others, where they skip over the detail and just give the general recipes and focus on trying to be "entertaining". Glad it's just a fluke that y'all are working on.

Palento is served in my restaurant everyday. I turned it with saltfish. I grate my coconut daily. Steam fish in coconut sauce with timeric & scotch bonett pepper. It’s probably more likely that the people got there and said they’re throwing this away here? Where we come from we love this stuff. Check out West African cuisine and you’ll be surprised at what is considered choice meat… intestines, tripe, feet, gizzards. 'Turned cornmeal' hails back to West African cooking. The dried pounded cassava called gari, even dried pounded yam and rice flour can all be cooked separately, adding each to salted boiling water, and cooked on the burner. Constant stirring is required, until it is reconstituted, cooked and soft. Hence, in Jamaican cooking the constant stirring is referred to as 'turned'. When done it much resembles mashed potatoes. The only difference is that no vegetables are incorporated into the dish. These starches are normally served with a hot pepper, meat and/or fish type stew. The stew incorporates assorted vegetables along with the meat of your choice, with a lot of hot pepper - hence the name pepper pot stew.

My grandma would make "coo coo" and salt fish or steamed fish. The coo coo was seasoned tun cornmeal with okra mixed in. Very similar to this dish!! One of my fave

We are from Antigua in the West Indies🇦🇬. We make fungi. Same recipe except we cut our okra into small slices and add to the corn meal while cooking instead of the gungo peas. And we don’t add coconut milk, we roll in butter in a cup and serve as a ball. This is very interesting, will try it. And the steamed fish looks sooooo delicious too. Blessings to your channel🙏🏾.

I love turn corn meal, the good thing about it you can change the ingredients to your liking. Sometimes I don't like the coconut milk so I use butter to sautee my shrimp, salt fish, pumpkin, skeleton, tyme and all my other seasoning. When everything sautéed together I add water and let it boil, then stir in the corn meal, lower fire and let it steam. Make sure use good amount of butter since you replacing the coconut milk. As I say its a dish where you can put what you like. My grandmother use the coconut milk when I was growing up.

Hi Deddy this is a new take for me with turn corn meal here in Barbados we make cou cou and the cornmeal is only turned with the okars no seasoning the seasonings are in the gravy with the fish to make it really tasty for the cou cou. Every day we learn more and more thank u for sharing

This is what we call coucou in Grenada. Except we don't use all these ground seasoning. And it must go with calaloo and okra. It's one of our favorite dishes.

The love in this video is comforting. Great meal prep and execution. However, consider shaking the Coconut Milk beforehand, as it tense to separate as it sits overtime. You both did great on showing a step by step process for making turn cornmeal great and pairable. Absolutely love the presentation at the end.

I've also been watching a few young men cooking in the bush in Portland. They climb the trees to get their jelly water, the coconuts, they pick the oranges, apples, ackee, plantains & coco etc.. then make the fire & cook. Sometimes they camp out their too. They also made a turn cornmeal recipe. They make their own coconut milk just like Deddy except they shred it cause they don't have a blender. I think you'll find them interesting. I don't understand everything they are saying because of the Patwa but you guys will. Colaz Smith TV on KZbin.
