It's difficult to get a crisp coating on razor clams without over cooking. In my experience, 1-minute in the oil is about all the time you get before they start to lose their moisture and start to turn tough, i.e. the longer you cook them the more moisture they lose. By 2-minutes they're rubber. Does this recipe give a crisp coating while keeping the clams tender? Thank you.

what i do is freeze them after breading, then fry them quickly in very hot 375 degree oil. fry only 2 or 3 at once so the oil doesn't cool down much. also, panko is better than plain bread crumbs.
