Great recipe sir. I am 56, my grandpa taught me how to make the right bowl of chili....using crackers. Handful of crackers hand crushed in bottom of a good sized bowl, chili covering all the crackers, a squirt of ketchup around half the outer rim of the bowl, cheese and chopped onions. If the heat of the chili is too much add a dollop of sour cream. YUM!

I am so glad you covered the benefits of processing the deer properly. We always skinned ours as quickly as possible to get the carcass to cool. If we had cooler temperatures and letting it hang for 3-5 days helped with the gamey taste. If not, we cut it up and put in refrigerator for a few days before butchering. All of us would gather and have a butchering party. We cooked up some sausage that was freshly made and washed them down with a few adult beverages. Everyone worked at processing. Whether it was monitoring the smoker, butchering, packaging, or doing the cooking. They were great times and good eating. Of course the camaraderie and sharing BS was what made a tradition for decades. Unfortunately, Father Time has it’s toll on ones health and memories is all we have to share today. The ones of us that are still kicking. Thanks Kent for letting me remember this part of my life that was so special every November and December. Sorry, to those that read this long boring post. I just hope you appreciate those special memories like I had and what Kent had with his grandsons.

I’ve been hunting deer since I turned 12, I’m 62 now. I have been blessed with good luck most years. I did something this year with my archery buck I never did before. Last Christmas I did a brisket. I saved the trimmings in the freezer. I made my ground venison 80/20 with the trimmings. Last week I did your Oklahoma onion burger with the ground. I followed your recipe exactly. My wife was very skeptical because her mother, god rest her soul, made the worst deer burgers ever. The onion burgers were absolutely delicious and she is asking for more. My son will be home for Christmas and he is a big venison and burger lover. He can’t wait to try them. God bless you and Shannon and have a merry Christmas.

I was able to put 3 in the freezer this year up here in Maine. Very grateful for all that the good Lord provides. As a commercial lobsterman, I feel like I can do alright putting food on the table even through the impending lean times.

I'd like to share this video with my next-door neighbor, who goes bowhunting for deer every November, and who loves a spicy "bowl of red". As the weather up here in northern Vermont has been wicked cold, I've just made a stockpot full of chili as I've done every winter for close to 40 years. I use guajillo and chipotle chilies and some cayenne for extra heat. I put at least half of it into plastic tubs to freeze for later. The rest I've been enjoying bowlfuls of for at least a week! Anyhow, I and my folks just love you!

I had the opportunity to meet Kent in Branson, Mo last year and he is the real deal. As nice a man as you will ever meet. Friends of mine have been to his and Shannon's restaurant and have been impressed with the hospitality shown by Kent and Shannon.

With you every step except for two things. I soak and cook my beans in beer (takes out the gas component) and the thing that makes the taste of deer (or elk, in my case) is the work you put in after the easy part, which is the shooting. Nothing tastes better than venison packed out on foot over three days from 2 miles back. When one of us harvested one the others would ask, “How big?” The answer was always, “Bring yer fork, we gonna hafta eat it here.”

Gracelandone. A couple of times I've shot elk and right after they hit the ground I thought "what have you done"? Now you gotta pack it out of this hell hole. As a little kid I remember my dad dropping an elk and he looked at me and said.. funs over, now the work starts. Ain't it the truth.....lol

This sure dredges up a family story. My wife and daughters wouldn't have any part in eating Bambi! I had a deer in the freezer and was making chili. I hid the beef I had set aside for the chili and used deer meat instead. The family raved about the best chili I had ever made! Then I panicked and didn't tell them. Months later a hunting buddy of mine cracked and told them. They wanted to be mad but just couldn't pull it off. . .

😆😆, I did the same with my friends kids. Both of their uncle's hunted and would give Terri meat. But it sat in her freezer, so I asked to take some home and they came to dinner the next night. Each of her 3 kids had at least 2 helpings. After dishes were done, the kids were playing and we asked them how much they liked dinner. They LOVED it lol. Then we dropped the bombshell 😆😆😆

It didn't go to waste! I don't understand why people would be mad about food animals being used for food. My grandfather went fishing frequently (the boats would hit crab pots on the way back sometimes), and we always anything he brought back. Salmon, tuna, trout, sanddab, rock grouper, we ate it, and it was as delicious as the fresh veg and fruit from the garden/yard. They always taste better than the meat animals and produce from the supermarket that are pumped out of a copier machine somewhere.

Fresh animals are the best, and I found the "hard" way. Last Thursday I had freshly killed chicken soup in church and I had no idea. After I complimented the cook on how tender and clean-tasting the chicken was, she said it wasn't store-bought chicken, but live chickens that she bought earlier from a proper meat chicken farm; they killed and cleaned them for her. She then pulled two chicken feet out of the pot as proof. 🫥 As a kid, I would've been upset, which would've been silly, since no meat is healthier than that from wild or free-range animals. But, socially, we don't get grossed out by what really should gross us out, which is commercial meat from abused animals. I felt good that she and her husband went the extra mile in feeding us the best chicken they could source for our end of year party.

Great looking chili. I just finished processing some deer a friend gave to me - 85 lbs of good meat in the freezer! I took all of the scraps and bones and made 10 gallons of venison stock. I was raised in North Texas and we ate chili with crumbled up Saltines and cheddar. I live in SE Texas now and they serve it over rice. Beans in chili is one of the biggest arguments you can have in Texas. I agree with Kent: if you like them add them, if you don't then don't.

Almost perfect, Kent. My family, when I was young ages ago, would make a pot of beans in addition to chili, and our guests were able to add beans if they wanted to. We also made a pot of rice, as opposed to crackers or fritos. Later in my life, I had a neighbor that would bring me a whitetail leg quarter pretty much every year, and it always made the best chili. Like Kent, he knew how to process a freshly harvested deer (his dad was a Texas game warden), and I used the same method of cleaning up the leg quarter that Kent showed. Not much fat, but a fair amount of silverskin and other connective tissue that has to be trimmed. Best chili ever.

Beans are a solid addition to chili. As a native Texan, I always prefer mine without, but sometimes you have to save that limit for a special occasion. I've needed to stretch my dollar a little further, and I've been on camping trips, where a can of just about any type of beans will add another bowl or three to your pot. Great recipe chef Rollins.

Food snobbery needs to end. It really is the most obnoxious thing. A grown man should not be throwing a tantrum and refusing to eat perfectly good food someone went to the trouble to make and invite them over to eat just because they made it a little differently( i have seen people do this enough to make me comment on it). I make it with and without. Actually, I often add refried black beans as a thickener just to get one past the chili snobs.

My uncle just dropped off this year's batch of venison to all the family member's! It's an annual tradition, so this video is coming at the perfect time of year! I just made venison hamburgers, and I was going to make spaghetti with venison meat sauce in the next couple days!

Venison stroganoff is also very good. Let me add that I have seen 3 or 4 videos on cooking chili this year, and they all used ground beef. Mr. Rollins is the only one who presented the traditional kind of meat to use, and how it is cut up. (At the grocery store, get "stew meat" or an inexpensive roast and cut it up.) As for beans, yeah, some people put them in the chili. I think they belong on the side, but it's more trouble.

Did ya'll know that 'venison' originally referred to any game meat? I wish everyone could experience the sitka blacktails we harvested in southeast Alaska. Some units you were allowed 7! Me and my hunting partner liked going above treeline, and so many deer it smelled like a pasture. You could shoot a buck and sometimes another would break cover and, blam! One time a 3rd one took off and I swung on it, and Scott started yelling and giving the cease fire hand signal, 'don't shoot, don't shoot, stop shooting!'. Because we had to pack these animals out.😂 There was always a patch of snow to stuff in the cavity after skinning, and eviscerating, and go hunt some more. We always completely boned them out, before heading back down. If harvested the way Kent says, from the kill to the table, there was absolutely no gameyness. The heart and liver never made it out of deer camp. Logging camps of the Tongass. c1967-1993.

This was an excellent video. I am a lady barber and have listened for the last decade to all the local hunters. I've always wondered about the processing technique. And you went from field to table. I blend my own Chili Powder. My go-to base is 'Chilhuacle Negro' peppers, and then I build it up from that. For the heat without flavor (also good for red pepper flakes), I use 'Indian PC-1' peppers. Your chili recipes can go to the next level when you build your own powder.

@@janfashing1978 If you really want a premium pepper, look for 'pubescens' type. They have purple flowers, black seeds, and can grow out 15 foot long vines for some varieties. Those are the premium - especially for making salsa.

I just made spaghetti with ground venison sauce the other night. It goes so well with tomato based sauces . My Polish neighbor used to make me cabbage rolls with it too. I'll have to try it with this recipe now I'm sure it's awesome. If any you never had venison or other game meats maybe try it as part of a dish first if you are nervous about the taste. It's worth it and the health benefits with game meat is much different that farmed meat. You get a really energized feeling . I try to have it a few times a month

Kent you're exactly right about how to take care of that animal when it hits the ground partner! How you treat it when it hits the ground makes all the difference in the world on how it tastes when it hits the table. Quick proper field dressing is essential and goes hand in hand with proper processing! Been processing my own for over 40 years now and wouldn't take it to anyone ever to do that crucial task at all! My Grandma taught me to always bake/roast wild game in TEA! Tenderizes the meat and makes it melt in your mouth! Also to cook it with chicken or bacon to add some fat. It's been so long since I've had a good feed of Venison.

The recipe that you show mirrors one that I developed through trial and error many years ago for church picnics. My Grandma and mother used meat chucks or shreds and since they served large families, beans were always an addition. Their secret was always the cinnamon, nutmeg, and cocoa. In my church recipe, I used mashed refried beans as a thickener and substituted coffee for beer. It did not matter how many other chilis other families brought, mine was always the most sought and I always brought home an empty pot. I love your channel and presentations.

I never mess with the scent glands: just leave them alone and you shouldn't have any trouble. The last venison chili I made was from the shanks. I slow cooked them in a dutch oven with onions and broth all day and all that connective tissue just dissolved and turned into flavor - and then I started working on turning it into chili. Wasn't gamey at all and everyone in hunting camp was coming back for seconds and thirds.

I took my dad's recipe and tweaked it, has kidney beans so some people may say it isn't real chili. Everyone loves it, I make a big pot whenever I do make it.

Thats too funny and explains the pyrenees presence:) I had a 185 pound Irish wolfhound a few years ago that my female Cairn terrier corrected often. Had to leap 3 feet in the air to do it. Definitely have developed a soft spot for your little guy and happy you folks have given all your dogs a better life.

"As a vet," i might suggest addin' a heapin' teaspoon of innnn-stant koffee to that Tex-Mex-mix. In my whitetail chili, i also add a spooner of peeeeeenut butter to mellow out the venison and Samuel Smith nut brown ale. And btw, i use Taza, dark Mexican cacao instead of cocoa. ❤

Are you saying most hunters don't know how to process a deer? If you're a city slicker who gets hunting later in life and use words like "harvest", they probably do. That's not most hunters. Most of us are country folk who know what we're doing.

@@Swearengen1980 true as a country person raised in a family of hunters. But even Game and Fish are pushing for new hunters because numbers of hunters are dropping. So these new hunters might not have a wonderful grandpa to teach them what all they need to know. They need mentors. This was valuable information for people who need it.

@@deborahmcsweeney3349 There are fewer hunters because of liberal locations who make it very difficult to hunt with stupid policies. I've also lost hunting grounds due to being bulldozed for rural subdivisions (which is an absurd idea in my opinion; moving to the country to still have a neighbor right there?). Still, fair point that they need to get their information from somewhere. Steve Rinella is where they should start.

My mom is indigenous from Panama 🇵🇦 so she got us used to having everything that normally has Noodles with, she'd replace with rice. My dad's side would go deer hunting every year and my mom would use their ground deer in chili, use black beans cause that's traditional in Panama she never really liked kidney beans in our chili, and than have a heavy side of rice and pour the chili on top, than top it with sour cream n cheese. Best chili ever :)

You make it the same way I do Kent. I do like saltine crackers with it but my wife's homemade cornbread is the best! She puts bacon fat in the skillet and gets it piping hot and then pours the cornbread in the skillet and it sizzles and then puts it in the oven........HEAVEN.

Thanks for showing some solid advice on handling wild game. Where I'm at here in GA I see all the time people hauling deer not field dressed to the processor that has a half dozen or more laying there waiting. I'll add that I bleed it out as much as I can immediately and then field dress. Cooling is key. Love the recipe! Congrats to your grandsons.

My theory on beans or no beans for chili is based on family history. If your family had a history with hard times your family chili recipe will have beans because that’s what was needed to survive.

Great video. The first thing I do is cut off the scent glands. And my motto since 1989 is "you can't it the horns" and I learned years ago is debone the meat and put it in a tub that drains and cover it with ice and let it set 24 hours.

I chose this recipe to make with my first gift of some ground venison. It was unique, and looked good. Well it came out just as good as it looks! Love the use of the cocao and cinnamon . Delicious!

We don't cut off the tarsal glands until after we skin it. We save them in a double freezer bag and use them with buck urine the next season to bring other bucks in range. We use an old pocket knife that we only use for that purpose. We always bone it out also. Some folks don't realize that the bones and extra fat are what gives the unpleasant "gamey" taste. For burgers on the grill, I grind 1 1/2 lbs of bacon ends and pieces to 4 lbs of venison grindings. Makes an awesome bacon cheeseburger with a slab of smoked cheddar or smoked pepper jack cheese melted on it.

Looks real tasty, Kent. I'd never have guessed at the Cocoa! I didn't grow up with any hunters and always felt like I missed out on a lot of valuable experience and learning. I've never been squeamish, either, so the video was educational as far as it went - though I'm sure a number of folks appreciate your "warning" and "jump to" timestamp! Thank you and Shannon for all you do. It sure is good to see you doing your cowboy dance - you might not be lifting too much weight yet, but you still have the moves! God bless and keep you all.

Been hunting white tail all my life and never thought about washing it like that. Definitely going to try it. We always gut them and leave them in the creek to cool and throw snow over top of em. That washing technique reminds me of how they wash crawfish for a boil in the south which I would love to see Kent do!

One of my favorite CKR videos. Deer hunting has always been a massive part of my family's life and lifestyle. Our goal every season is 5 deer in the freezer, because we try to avoid all processed meat and supermarket meat as much as possible. Made deer chili just 3 nights ago, and my approach is very similar. I realize some people think beans in chili is heretical, but honestly I don't even bother making chili if I don't have beans. Kidney beans are great, but I also like to use navy beans. And a can of the "chili beans" adds a nice kick of chili flavor, too.
