What's the difference in dehydrating and freeze drying mushrooms?

The fact that they could be stored nearly indefinitely seems like a big step up from dehydrating. But I imagine a slight downside would be the fact that freeze drying will result in a significantly lighter dried mushroom than dehydrating. And since freeze dried mushrooms aren't something people have a lot of experience with, understanding how much you should consume could throw people off who are used to dehydrated mushrooms.

I have a vacuum oven. I currently use it for drying them. I set the oven to 90*F and pull as deep as a vacuum I can and let it continue pulling while they dry. Seem to be finished in about 6 hours. Seems like a hybrid of the two methods mentioned in the video.

​@douglaszornow8974 unless it runs into contamination or like way too low humidity or way too low or high of temperature, mycelium growing on anything will eventually fruit. Fruiting out of just grain just won't give you as much because it can't hold as much water for making fruits which is the main purpose of bulk substrate.

The texture while chewing is definitely different. Don't notice a difference in taste. My preference would probably be properly dehydrated because the chew is the most pleasant...or least unpleasant. 😂

There is actually a study on this. The lower the temperature the more it keeps its potency. The loss of potency is minimal from like 75 degrees to about 120 degrees. One of the psychoactive compounds is heat sensitive.

Put a keeper in the jar, you can make from baked crispy Epsom salts crumbled coarsely and wrapped in paper towel. It will take all the moisture out. Especially important if you freeze dry them. They will be extremely sensitive to humidity after that.

Or those silica gel packs that come with new shoes. Just recharge them in the dehydrator with your mushrooms.

@peter7582 silica gel packs work OK. However baked out Epsom salt is much cheaper and will get almost all the water out that isn't strongly chemically bound like in sugar. It will even dehydrate cobalt chloride hexahydrate to blue cobalt chloride. I used these Epsom salt paks to preserve extremely moisture sensitive laser crystals like Potassium dihydrogen phosphate.

I was recently looking into this myself. Apparently, freeze drying significantly increases the shelf life of the mushrooms and helps to retain the most potency. So in the event of a zombie apocalypse you can rest assured that you will have plenty of mushies 🍄 to keep you occupied for years to come, while you wait for things to blow over. 👍🏽

Neither technique affects quality or potency. A morel mushroom looks great until you dehydrate it. Once you rehydrate it, then it looks good again. It's not a beauty Contest and if it is just rehydrate and enjoy!

You can also use a vacuum chamber, and frozen material. Save ALOT of money, and you'd show us something different. Just a hash oil vacuum chamber setup

Ya freeze dried will keep 95% of the nutrients as well the only downside of freeze drying is you leave them out they will rehydrate !

Yup also the mushrooms are more porus so oxygen and moisture will react and make them drop in potency very quickly. If it is regular gourmet mushrooms though freeze drying is the way to go 100%

Dehydrated mushrooms will rehydrate too. Whatever way you dry them, you need to store them in an airtight container with a desiccant

Apparently you could try freeze drying with a vacuumed sealed container and some desiccants in the bottom. I think twice the weight of whatever you are freeze drying. And then continue to pump out the air while the process takes hold. A low tech potential work around. There's actually a paper on this in the 60s. So you could potentially buy a small fridge/freezer, bunch of vacuum sealed containers and pumps, and a large amount of silica gel if you need to do large batches. Oh you also need to freeze the food first.
