I find these so nostalgic...reminds me so much of my Mum and other 'grown ups' ...just doing baking and cooking...sigh...as back then you had to actually cook...and peel a potato ...We didn't have ready meals..or frozen mash... those were the days xx Delia reminds me of my childhood friends Mum..

Excellent dough-handling advice. My only concern is - Margarine and Lard. Lard is great, my Grandma always used it fir Pastry, and I have, too. But Margarine? Not a good thing. I have always used Butter. And I have been baking since the '60s.

I think you're right. Delia in most her recipes now recommend butter, or a mix of lard and butter. This episode is from the early 80's and things have moved on.

(: I prefer butter too ....😚 It tastes better .... ☺ Of course they say now that "Margarine is not good for you" ... We were lied to all those years with nothing but false information that only put everyone's health at risk!!!!! :( Just like the new "Keto Diet" which is bad for your heart!!!!! Yet so many people are on it!!!!! ... :( I really believe that a balanced diet and eating natural ingredients is the best diet!!!!!

more people need to watch Delia. Can you imagine American households that could have the immense knowledge of home cookery that Brits have. I'm probably the only American in my circle of influence who knows who Delia Smith even is and it's a shame

True but the USA had Julia Child who was similar in style to Delia and neither did not assume you knew how to do everything and just needed a few hints like most so called celebrity chefs do but showed how to do the basics.

They used to be. A great many vegetarians, even into the nineties, ate eggs and fish. It wasn't as religious as veganism. It was more about being anti fat back then.
