If you brown the meat make sure that you save all the juices that come out of the meat. I make many of your meals but never use garlic.

Wish a show had been made of Delia and Victoria making those brownies. Victoria's last project was to be a send-up of the bake off shows, but she died before she completed it.

Delia I used to watch you cooking on tv in the 70's when I was a young child. I'm now almost 60 and all I have of you are good memories. I must get hold of your cookery books.

This is over 30 years ago now, and during that time I have always been a vegetarian. But not any more, so I can revisit this and get a whole new lot of inspiration! And weren't clothes nice then?

Does anyone think for the pie, that that was Way more than one and a half pounds of rhubarb? It looked closer to three pounds to me.

The recipe for Welsh Rabbit looks easy enough, but there is a lot of wastage involved. Assuming you're not an ale drinker, you've got to buy a bottle and then used only a small portion of it. Same goes for the sage and onion as only small amounts are actually used in the recipe. Of course, this often happens in cooking where you only need a bit but have to buy a lot more than that amount, but it is striking that in a recipe with very few ingredients, a very high proportion of the items go to waste. I mean sure, it is possible to find other uses for the remaining stuff, but more often than not you put them in the fridge and shortly thereafter you throw them out. I just wonder if Delia could have found some substitutions for maybe the ale or if dried sage could have been an option. I'll admit this is a moot point as this video is probably thirty years old.

I made this pudding for my family this Christmas, I'm 25 and it was my first time cooking (and tasting) home made Christmas pudding. My folks live all over so I put a video of me stirring the mixture on the family group chat so everyone could make a virtual wish! The only trouble is that it was so good its ruined the microwave version forever :)

I found mixed spice recipe!! 2 tsp cinnamon 2 tsp nutmeg 2 tsp coriander (dried spice) 1 tsp ginger 1 tsp allspice 1/2 tsp mace 1/2 tsp ground clove Since mace and nutmeg are of the same fruit, you might omit the mace if you feel the nutmeg flavour to be too much. You also might brighten the mace, allspice, cloves & coriander by dry pan roasting the seeds quickly before the grind. I don’t know about the powdered version, whether you CAN roast it…I doubt it though.

If you’re going to store things in a freezer, use a chest or upright freezer without the frost free functionality. Particularly for seafood and meats it will stop freezer burn and things drying out.
