I love Delia Smith. Her cooking is homely and family orientated. Delia said herself "Don't mind chefs, we are home cooks"

Lovely merengue, but it takes time to caramelize, harden and then grind the sugar. Would another kind if dark sugar work, or might it be too granular?

I’ve never successfully made these caramel meringues. They always go really soft and sticky no matter how long I cook them for. If you manage to cook them successfully like Delia please let me know the secret!

I wondered that too. Maybe if you grind down demerara (coffee sugar) it might produce the same results, you might have to adjust it to 50/50 of the white instead of her portion.

It's funny the fuss she makes about lowering the calories through fat and then proceeds to heft sugar into everything 😆Ah the olden days, before they realised sugar was the real villain in the weight loss war.

Sugar is a treat you have once in a while. Fat is something you consume everyday in terms of fatty food, added oil etc. nothing wrong with wanting to eat less fat.
