Delicious Breakfast Potatoes | Skillet Potatoes

Here's my easy yet delicious Breakfast Potatoes recipe. Skillet Potatoes are simply Potatoes and Bacon or any other protein cooked to perfection in a skillet as opposed to cooking in an oven. I particularly love this dish cos it is very filling; it can be eaten as a full meal without requiring any sides.
Now, if you do not eat Pork, then feel free to do without it. This recipe is yummy with or without Bacon and Sausage.This recipe is bound to help even kids enjoy Potatoes more.
Ingredients:
5 Big Potatoes (Irish)
200g Bacon, diced
300g Sausage
1 Red Bell Pepper Chopped
1 Green Pepper Chopped
2 Tablespoons Coconut/ Vegetable Oil
1 Small Onion chopped
1 Tablespoon Paprika( Optional)
3 cloves Garlic, minced
1 Tablespoon Minced Ginger
1 Teaspoon Rosemary
1 Teaspoon Dried Thyme
2 Knorr Chicken cubes
Salt to Taste

Tried this and it’s so nice but always end up with a cranky potato I mean not too soft ..I always add a bit of water to soften it up well cs of my toddler..
