INGREDIENTS :
5-6 medium size brinjal / Eggplant
4 tbsp oil
1 tbsp cumin seeds
2 medium sliced onions
2 tomatoes roughly chopped
2 slit green chili
1¼ tbsp chili powder
1½ tbsp coriander powder
1 tsp cumin powder
pinch of turmeric powder
½ tsp garam masala
salt to taste
Tempering :
1 tsp mustard seeds
3-4 crushed garlic
few fresh curry leaves
METHOD :
Wash and cut brinjals and immerse them in a water bowl to prevent discoloration. keep aside.
Heat 2 tbsp oil in a pot, add cumin seeds and saute for a few seconds. Add sliced onion and saute until onion turns translucent.
Then add tomatoes, green chili and saute, and cook for 1-2 minutes until the tomatoes turn slightly soft. Now add spices chili powder, coriander, cumin powder, and turmeric, and give a good mix.
Add brinjal cubes, and some salt and saute for 1 minute on medium heat. Then pour half a cup of water salt and give a good mix. Cover and cook on low heat until done (brinjal cooked ). When the brinjal is cooked it turns soft.
Tempering: In a pan heat 2 tbsp oil and add crushed garlic, saute till golden brown, add mustard seeds, let it splutter then add a few fresh curry leaves and mix well. Put off the heat and pour it in prepared brinjal masala. Sprinkle some chopped coriander leaves, garam masala and mix well and done.
Serve hot with chapati or as a side dish with rice and Enjoy!
