In the Haitian culture, we fry our plantains a little differently. We cut them in more chunks and fry them for a bit on the outside, take them out, flatten them, dunk them in a mix of water, lemon or lime, salt, pepper, garlic powder and whatever else (can be different for everybody), and them fry them again until they're nice and crispy. It's the best! We usually do it with green plantains though which is a good savory flavor

So surprised how similar Indian and Caribbean food is! I'd call your roti a paratha, the roti i would eat is like a single layer that you butter AFTER cooking.

Hi Caribbean lovely people, I'm from Mauritius and my history is the same, my ancestors are from India, and the food are cooked more or less the same way, and we also call this roti, here the rotis are single layer which you can get as fast food otherwise at home most of us, especially the hindus, we cook paratha which we fold as envelope, I love the recipes of Rachel, they seem very familiar, love from Mauritius to Caribbeans and to my ancestors relatives Indian of BEAUTIFUL INDIA
