Made this today and it's outstanding. Carnivore flour recipe seems to be forgiving too because I didn't have quite enough chicken flour so I made up the difference with pork panko and it didn't seem like it made a difference. I had a pullman loaf pan like yours because i had tried to find a good low carb recipe for bread without success. Let's be honest, low carb bread is either ridiculous or gross. Now this one was spectacular. It tastes amazing. Came out just like yours. Slices perfectly. Good lord, I can't wait to see how it toasts. Thank you for finding the holy grail without a gazillion eggs in it or having the texture of a memory foam mattress.

Only one thing different mine had a crack at the top but it didnt affect the flavor or texture bread was not moist at all I did use monk fruit instead of allulose, and one other thing it browned very nicely the crust was a bit denser then yours but I was a winner. I did use a regular loaf pan will use my pullman next time around!!! and da dum will be using brown severe and a bit of cinnamon I do love an experiment!!

Hello. I have been experimenting with the Carnivore Flour and the Carnivore flour Bread Recipe. The Flour is a good substitute for plain pork panko. I have plans to try it in other pork panko ways. tried the Waffle recipe. My husband said that the batter is like batter at the hotel waffle bar (Yay!). I have been using the bread batter with tips from below, sweetener rounds out the taste, whipping the egg whites and folding them in makes a fluffier batter. This will be my normal bread batter. Thanks for the tips. I used this batter for DASH mini chaffles. 1/4 US cup measure per chaffle. yielding approx. 16 chaffles per original bread recipe. I like them savory and sweet. I add vanilla and a touch more monk fruit to make the batter sweet for breakfast. I will try the batter in different ways, but I am a batch cooker and am partial to the uniform chaffle shape and size. I did use 1/4 of batter in a greased 6" flat bottom glass bowel in the microwave for 90min. Then toasted it. I like the thinness and crunchiness of the flat shape. It was great with butter and homemade seasonal monk fruit blackberry jam. Used once in awhile for a treat. Thanks again Mel for the original recipe.

I'll let you guys know what I did so you can further experiment. First of all I used freeze dried chicken only because chicken breasts where I am are more than $10 per pound and my electric bill is $100 even without running the oven a whole lot and I don't have a microwave. But it's possible that the freeze dried chicken flour might be lighter in weight than dehydrated. Anyway - I was thinking I was going to make half of your recipe for this bread - only 100 g of the ck chicken flour came up to almost 2 cups of flour. However, I used half of everything else in your recipe. And I only used 1 1/2 tsp of sodium free baking powder. I think I used around 20 g of pork rind flour. I had to add more than 1/2 cup water - and the batter was still thicker than yours. I got 4 4 inch buns out of it. No chicken flavor or eggy taste. The chicken smell was very little and only while the buns were hot right out of the oven after that you couldn't tell. Just so people will know - sodium free baking powder does work. However, the crust tends to be more crispy than when you use regular baking powder - but the inside will still be soft. I'm positive if I keep working on the recipe I will get some really good waffles as well and it may actually lend itself to recipes that aren't savory because the flavor of the buns I got could go either savory or sweet in my opinion.
@CookwithMel14 ай бұрын

I didn’t notice any experiences of trying your recipe in the comments so I thought I would add my own experience here to help others out. I tried the recipe including making the chicken flour from scratch. I started with the chicken flour on a Friday evening and didn’t bake the bread until Saturday afternoon. First, I think that your gram measurement for baking powder is off. 2 tablespoons was 15g exactly half of what is written so I think you may have the recipe wrong gram wise. For me the bread tasted strongly of the pork panko that I got off Amazon which I didn’t enjoy too much, it would probably work better if you found a milder tasting pork panko. Also the bread texture is like cake texture for anyone wondering. The cost of making it(the chicken breast alone cost about £10) and the total flour will make probably two loaves not including the other ingredients, the loaves are quite pricey 😬. In conclusion, I won’t be making it again. Personally, I don’t mind the egg white bread myself because it’s neutral tasting and depending on the recipe you follow the styrofoam text can be mitigated and it’s also way cheaper. Still if you have an egg allergy and want to keep it carnivore then this may be a good option for you.

@@CookwithMel1 thanks, I saw they do make mayonnaise with avocado oil instead of seed oil. Heavy cream sounds good too.

To mix just enough flour for one loaf of bread use: 91g Chicken flour 46g pork rinds (ground/sifted) 46g egg white powder 18g beef gelatin

That's awesome...thank you!

mayonnaise isn’t carnivore. it’s vegetable oil.

Not if it's homemade. I used a recipe by KetoSnacks where he used boiled egg. By the way Greek yoghurt or Ricotta works great too as an alternative to mayo

Well mayonnaise isn't carnivore......
@CookwithMel14 ай бұрын
It was chosen for the low carb count. Feel free to use heavy cream or yoghurt instead

@@CookwithMel1 same ratios?
@CookwithMel14 ай бұрын
@4g63tpowered yes. 100g please. The mayo/cream or yogurt softens the bread.

@@CookwithMel1 Hmm, softens the bread... so would sour cream work too? It'll save an extra shopping trip 🙂

Mayonnaise?? Regular mayonnaise? It contains seed oil and sugar!
@CookwithMel1Ай бұрын
Nope mine is made with boiled eggs. The recipe is by KetoSnacks. Greek yogurt or smooth cottage cheese works great too

@@CookwithMel1 do you mind sharing that recipe too?
