Mexican style migas/ a la Mexicana is a very traditional breakfast. This dish can easily feed a crowd and the best part is, its very inexpensive to make. The simplicity of this dish reflects how easy it is to make but the outburst of flavor is unbelievable. Migas means “crumbs”, just know there won’t be any crumbs left behind, thats for sure! Enjoy.

Migas a la Mexicana recipe
Servings: 4 people (2 eggs per person)
4 TBSP avocado oil + for frying/more if needed : amzn.to/34oS6f1

1/2 medium white onion, finely diced ( 1 cup)
1 Serrano pepper, finely diced or Jalapeño
2 Roma tomatoes, finely diced or 1 cup
8 whole eggs, large
