Nice take on adobo! I usually just throw a whole chicken in the pressure cooker with a cup of vinegar, cup of soy sauce, bay leaves, small head of garlic, and lots of course ground pepper. Always served over rice. It gets Pinoy approval.

I would say this is the most authentic one I've seen on youtube. Would love to try coriander in my adobo too

Wow Jeremy! That looks fantastic! My friend has told me numerous times how much he loves his (now ex) mother in laws recipe. He did not know how she makes it so he could never actually describe it. After seeing your version I'm definitely making that. I also shared it with him so that he can still hold onto that great experience of enjoying the dish even though he lost his mother in law in the divorce. Thanks.

I made this with thigh fillets and worked out really well. I added less water and reduced cooking time.

@@SchoolofWok no, simmering it down just enough to a thick sauce coating. But if im planning to make adobo fried rice the next day i would leave some 😂

Always cooked this! This is best served for workers and scuba divers for what an appetite they have after a days work.

If you wanna make it really traditional use a wok without handle 😭 cause apparently Filipino woks comes without the wood part and not everyone bothers putting the handles in or knows about that 😔

I make a version one of my friends from the Philippines taught me with pork trotters and chicken, you really brought back some great memories of my friend!

Jeremy please do more Pinoy dishes. Their home cooked dishes are so underrated and need more publicity. Maybe a Bicol Express or a squid adobo.

It's good version! 👍 The other cooking method that some families do is the braising the meat with the marinade first, then sear last. Some families add coconut milk, some families make "white" adobo (w/o soy sauce, just vinegar). I like doing pork and chicken adobo for that signature lip smack in every bite. But either way, adobo is still 💕. PS. It's a sin to not eat adobo with rice 😂

After you add in the hot water, does it rehydrate the chicken fat back to being soft, essentially undoing all the searing and basting you did in the beginning?

the searing adds to the flavor and texture.

Hi Jeremy, great to see this and what a shame that adobo isn't as well known as many other staple dishes from eastern cuisines. I used to have a Filipino CDP who would always make the team either chicken adobo (HOT with black pepper!) or pork congee (with all the bits and bobs) for breakfast. Food of the gods!

Too many modern ways to cook our national food but the old ways jad drop 1 at a time then put all ingridients and make it dry thats it. The oil that comes out in to the meat thats the very nice to put in a hot steam rice. Anyways tnx for showing out our filipino dish always watching skul of rock also hahaha

If you wanna makeup really traditional use wok without a wooden handle. Apparently the local woks (Kawali) don’t come with the wood part and people don’t know the hollow metal cilinder is supposed to hold the handle 🤦🏻‍♀️😭

There are so many versions of adobo in the Philippines. It can vary from region to region or just by person to person.. Some serve their adobo dry and oily with the meat falling of the bone. Others serve theirs with the meat finely shredded.

Humankind made it this far on account of chicken fat; it's a crime to pour it off. What do all these youtube chefs have against using a rubber spatula? I hate to see so much sauce left over in the mixing bowls.
