I was taught by my Oma to make this dish, we use lard and veg oil 50/50 ish if there was no save bacon grease and all the bacon was cooked first then set aside, to be returned in the last minutes of cooking to heat through. Rather than spring onion just regular white/brown onions and alot of them finely chopped or grated was used, with lots of black pepper to finish. My grandmother would tell me this was one of the dishes she use to make during the great depresion to keep the families body and soul together. This is the most basic version purist best imho and every family has there version, Thanks for the video i'll make my Omas version tomorrow with the kids and retell her stories of the family living in rural germany, good memories, good food, family and friends, can not be bettere. I ate so many potatoes when I lived in Austria. I’ve tried to recreate them but I could never make them taste the same.

Good so far ... but paprika is missing and we german's are not using green onions. Just normal onions out of the garden. My Grand Mother only used a cast iron skilled and the bacon went in first with butterschmalz (don't know what it is in english) sometimes there was garlic glove in the pan with the bacon and she took everything out when the bacon was crispy and put it back after potatoes where done. On top of that chives ... and sometimes there was an egg cracked into the potatoes

I know this sounds crazy. Btw, the dish looks fantastic! A slant on this dish is to add about a teaspoon of vinegar and a couple teaspoons of sugar. The flavor you’ll get is phenomenal.

There is normally enough salt in the bacon that I don’t need to add any. I guess it’s down to personal tastes

I have tried hard but I cannot find anything about this dish not to like. I thought my ancestors were Norman but apparently they must have been of Germanic origin. Must have a word with my Mother (if I could, sorry mom). Not sure about Steet Food but these would look nice beside a fried egg or two and other breakfast accoutrements.

Did your Mom cut them like this or in thinner rounds like mine did? My wife's family cut them into thinner rounds also, and I still make them like this from time to time but, I've really started to like the Southern U.S. version of 'Home Fries' better since they get crispy all around and keep a fluffier lighter interior. They are very similar though and I look at it as an evolved version with the downside of cooling off more quickly but less greasy on the other hand.

@@bensebaugh6017 Don't know who you are replying too, I have never had this recipe. Similar perhaps but not this. They look more like chunks/lumps than rounds to me I would make Roast Potaoes not much bigger.. I had scalloped potatoes in the past nostly but not always in batter, The rounds of thos were cut may be about 5mm or thinner but that was because it was to make the potaoes go further. Ordinarily I prefer chunky chips to matchsticks like McDonalds.
