Atta flour usually has a high gluten content so if you can find a finely ground good quality atta you should be able to make something similar to wholewheat croissants.

Yeast will work even in your fridge. The cooler it is the slower it works. I suspect that 400g is probably just over about 2½ cups but I can't say for sure. The best thing is to buy a cheap set of kitchen scales. They are not expensive and it is always more accurate to measure by weight than volume.

I made your croissant recipe today and it worked really well. I forgot to cut the dough in half so they were a little thick; next time I'll do that, but my husband and I were really surprised at how well they turned out; it seemed too complicated for me until I watched you do it! Thank you for such a simplified easy to follow croissant recipe. If I was wanting to use the dough that has been frozen, should I get the dough out the night before and put it in the fridge if making in the morning? Also, how do you wrap or do you place dough into a thick plastic bag to prevent freezer burn or how long will the dough be good for in the freezer?

When I roll my butter out I place it in the refrigerator for 15 minutes so it gets a tad firm and then I lay it on the dough, fold over and continue like you do. Great video!!

Worked a treat, I made a batch of pain au chocolat and croissant minitures out of the same batch of dough. I put in an extra turn to make four in total, great result. Thanks.

I make croissants Christmas Eve. I leave them in the fridge "on hold" until we get up Christmas morning. Then I take them out to rise until just before we all sit down to brunch, pop them in a hot oven. I tried this recipe this a couple of days ago. The only change I made was I used a bread machine to make the dough. The family decided they were the best croissants yet. Thank you!

Hey, loved this recipe but I find the butter content a bit too much, so I reduced it to some hundred grams and it came wonderful. It wasn't particularly buttery, but it was good and fluffy. It was also quite flaky. Especially if one wants to add chocolate then most of the taste comes from the chocolate and the butter can be reduced.

The dough will keep for several weeks, maybe months (idk exactly because I have to make croissants if I know there is dough in the fridge!). The croissants will keep in an airtight bag or box for 2-3 days on the counter top, or 4-5 days in the fridge.

Hello there, love your videos. You explain everything so well and it seems effortless. I just have a question to ask you that I want to bake these yummy croissants in the morning so I need to prepare everything a night before. So what would be the stage at which I will refrigerate them?? Thanks in advance

Madiha Zeeshan What I would do is freeze the dough when you've made the croissant shapes. Then the night before you want to bake them pull as many as you need out of the freezer, place on a baking tray. put in a large plastic bage and put in coolish (i.e. not warm) place. They will defrost and rise overnight ready for baking in the morning.

Make sure the butter is hard before you roll it out by having it set up in the fridge. Also made sure the dough isn't too thin compared to your butter.
