Wanted to add, I actually tried the recipe with no sweetener (for pizza crust) and it still worked but wasn't as moist or browned on top. You knocked it out of the park with these rolls. Absolutely fantastic!! I usually shy away from bamboo fiber because everything usually tastes like cardboard. It turned out more like a biscuit for me than a dinner roll, but it was fantastic nonetheless! I added about 1/4 tsp onion powder. It was sooo yummy and bread like!! Good job and thank you!!

Happy Solstice! ☀ Thanks for this - I love bamboo fiber, although as you noted, it's kinda sticky. And yes please do a non-sweet recipe if/when you get some time. I do love coconut flour too, but yeah - the carbs! I still think your cinnamon roll / pizza roll dough is da bomb!

Oh god! I've been out of keto lifestyle this December and eating a lot of bread, thinking about how hard is going to be January since I'm too accustomed to eat bread. I think this recipe has saved my January and upcoming year, since I don't want to use gluten on my diet, but at the same time, gluten makes that perfect texture and I seen how gluten is the most difficult thing to replicate in keto. Thank you so much for your effort. You are my favorite channel on KZbin since you always go one step forward. ❤

The way I was taught to make the roll shape was to sort of squeeze it through a circle formed with my index finger and thumb, pinching off and putting pinched side down. But that would not allow you to premeasure.

Wow! Best Keto bread I’ve tasted (and made) yet! Love that these are free from almond flour. Thought I messed up the recipe by over whipping the eggs and sweetener. I didn’t use Anthony’s xanthan, gum, and I didn’t roll them perfectly. They still turned out awesome! Alicia, I’m wondering if this dough could be used in a bread pan for a loaf of bread? Thoughts?

I have a family recipe for Dill bread that used cottage cheese. While I am not interested in the latest cottage cheese keto fad, I would love to convert my grandmother's recipe. The ratios were a cup of cottage cheese to 1 egg and 2.5 cups flour, 1 T butter and `1/4 warm water for the yeast (along with minced onion and dill for seasoning) Also 1/4 soda and 1t salt. Where would you start....would you use your recipe and half the eggs and for the rest of the eggs sub paneer cheese (drier than the small curd she used)?

I would use dried ricotta for the cottage cheese, I've had good luck with that. And since only 1/4 cup water I would keep 3 eggs and the butter. Basically using the ricotta instead of the cream. Look forward to hearing if it works, if you try it!

Happy New Year! Hope you have a very prosperpous one and expand your shipping and KZbin followers! Just wondering if you’ve solved your bread recipe issues with the egg white powder issue. I’ve been buying keto bread at Costco but realize it is the cause of my digestive issues-modified wheat starch I think is the culprit. I do use oat fiber in recipes like my biscuits. You can probably swap the bamboo for oat you just might need some extra oat.

Awesome!! We used to buy the Hawaiian sweet rolls? Cut the whole batch on half and load them with a huge square cooked burger patty, toppings and cheese and bake long enough to melt for quick sliders for our 5 littles. That might be nah on the menu! 🎉🎉🎉 Thank you!! Amazing as always. I also can't stop experimenting with bamboo fiber recipes. Lol

Definitely have to weigh eggs. Costco here was selling large eggs that were smaller than small eggs (in their Wilcox brand 5 doz). We actually talked to management about it. 5 Doz eggs now costs 20.99 at costco, $28 at Fred Meyer and Wallmart, $22 at Safeway. At those prices, I should be getting large eggs and not extra small in my large egg carton.

Yeah its crazy! Eggs always increase in price around the holidays. Luckily I haven't noticed them being small. I buy Walmart or BJs 5dz. Boxes. They went from $14 in October to over $20 in November.

⁠@@KetoUpgrade Here in California we are dealing with shortages due the bird flu. Some stores are limiting purchases to 1 dozen per customer. That has hiked egg prices nationwide due to the slaughter of 10’s of millions of chickens plus the holidays. It takes about 4 months to rebuild a flock, so by Easter we should be in much better shape. 🐣

I’m going to try these. I did a protein sparing Hawaiian roll but it deflated and there was pineapple extract. It was good but flat and didn’t taste like the Hawaiian sweet rolls. I’m definitely trying this!

I have tried with my cinnamon roll recipe. I will probably start trying again soon. Every year around this time I tried to get a filled fried donuts then have to give up so I can get successful recipes to put out, lol.

@KetoUpgrade I made this recipe yesterday but with Oat fiber instead, they were soft and airy inside but dense in the outside, I don't know if it was because of the oat fiber, maybe bamboo fiber is lighter but it upsets my stomach. I really like to try some donuts that has the texture that Donuts from Pricesmart has, like soft, airy and chewable texture. I miss eating donnuts from Pricesmart Hahahahaha.

You can swap out the bamboo for oat but if the dough doesn't look like mine, texture wise, when you get it off the mixer, you may need to add more. All keto ingredients differ even brand to brand. Merry Christmas to you too!

Question I’m a rookie baker I have some keto products like big bag of Oat fiber and almond flour that will expire shortly can I continue to use the bag up or do I have to toss it all out? With products being so expensive it would be Awesome to still be able to use also what does the inulin do and does it matter which product to use??❤❤❤

You can use oat fiber in place of the bamboo but may need more. The almond you can use to replace some of the bamboo. But if you take out 30g you need to replace with 90g almond. Inulin is the only low carb ingredient that will make the yeast activate but you can use sugar, honey, maple syrup or molasses in small amounts to do it.

Swerve brown started putting Allulose in it, so be sure and check the label. When I buy organs Swerve brown from Sprouts market, it has not had Allulose -so far, anyway.

Yeah I didn't realize that when I made the video, all the swerve I use to get (which wasn't much) was just erythritol based with tagalatos I think. Good to know, thanks for the comment.

Pork gelatin is less strong than beef gelatin. But I could not find a measurements on how much more you need.

I have a serious problem with bamboo fiber - every baked good is green when baked. How did you get it to be just a nice brown, no green?

I've never had that problem so I'm not sure. I always use Zimmerman brand. Google said a chemical reaction usually between Sunflower seeds and baking soda. Not sure what recipes you are using that that is happening to. My recipes shouldn't do that.

If I want to try and add some pineapple flavor for a Hawaiian roll do you tha teaspoon would be enough or too much?

There is no pineapple juice in kings Hawaiian rolls but if you want to add a teaspoon, if should be fine. Might need a tiny bit more "flour" to get the stiff dough like I had.

Thanks. I find egg white powder dries out my recipes more than whey. And I've tried swapping beef protein for the whey and it gives no structure and is very wet, at least in my cake recipes. They work totally different so I would have to do completely different recipes.

Mine ended up doughy/wet inside. I used the exact same sugar that you used. They looked so good baking up. Then they sank and were doughy inside. What should I try next time? Cook longer? They really got brown, so I wasn't sure .

If your dough looked the same as mine the only thing I can think is your oven runs hotter than mine. Maybe 350 for 30-35 minutes. You can probably still eat those ones just have to cut and toast them. I have all my tests I've been eating that were still doughy.

Purchase an oven thermometer. My oven is 25-30 degrees off from the settings.

Thank you so much creating these rolls. They look good! Can egg white powder be substituted one to one ratio for Unflavored Whey Protein? Another option if I want to substitute almond flour for Unflavored Whey Protein, would the ratio be 3 part almond flour and 1 part of Unflavored Whey Protein. And for Grass fed Beef Gelatin, any substitution would you suggest for this as the binder? I have worked with psyllium husk but somehow baked goods always turn out slimy in the middle Thank you!

I have not found a 1:1 substitute for whey yet and have not tried almond flour for whey. You can sub almond flour for bamboo which would be 3x the amount but I don't think they would taste good. I haven't experimented with subs for the beef gelatin, I only know it's stronger than pork or a vegan option. Psyllium husk is tricky to work with and it's been awhile since I use it in anything. You probably wouldn't need all 4 Tbs of psyllium in place of the gelatin. Sorry I can't be of more help.

Since you use 116 grams of Bamboo fiber... How many grams should I use if I use Oat fiber instead?

You can swap out the bamboo for oat but if the dough doesn't look like mine, texture wise, when you get it off the mixer, you may need to add more. All keto ingredients differ even brand to brand.

Do you temp your baked bread products? Don't remember where I heard it but 210 F comes to my mind. I started checking Victoria's bread with bamboo fiber & 210 is working with that.

GURRRRRRRRL! SHUT ALLLLL THE DOORS up in here!! OH MY GOODNESS! Y’all have got to make these! They are absolutely bomb! Sure glad I made 18 cuzzzzzzz ya know ima have these gone in the next 3 days 😂😂😂 All for me 😂😂😂 Soooo if we omit the sugar, how much more of what needs added? I know you don’t use vital wheat gluten, but I’m wondering if we can substitute a half a cup of that for the sugar. I’m definitely not an expert in this field and know how to stay in my lane but what are your thoughts? Mine started browning quite a bit after 15 minutes so I turned the oven down to 350° and rotated them then baked for 10 minutes more. Perfect! Do they need refrigerated? Thank you again!❤

You're welcome! So glad you loved them! Good job using your judgement on the bake!!! I omitted the sweetener and didn't need to add any extra "flour". My experiment didn't get very brown though, so you may want to egg wash them to get them to brown a little. It was maybe a little less chewy though. I've never worked with vital wheat gluten so I'm really not sure. You may be able to swap out some of the gelatin for vital wheat gluten. I had them out for a few days but wouldn't keep them out much longer since they are moist, they may mold quite quick. I had them in my fridge for a few weeks. ❤😊

@ ah ha! I used brown swerve and it has allulose in it so that’s why they started browning quickly. Next time I’ll use the Lakanto like you did from Big Lots, I went too 😂 Now all of them are closing 😭

True but I also have a completely gf bakery and have close friends and family with celiac. I would maybe use vital wheat gluten instead of the gelatin.

Just an observation: Are yters told how to do content? Told to do ‘open mouth’ thumbnails? Told to add music to videos? I find it fascinating that 90% of videos have the exact same format. FYI Amazon is out of Anthony’s at the present time and it will be mid Jan. Before they will get it back in. 😢Bought another 1 from Amazon Microingredients brand working well. 😊 I understand your frustrations with the baking I tried making sugar cookies 1/2 a tray went on the floor and after I tasted them they all went in the trash. 🤢😅. It’s very difficult to change from flour baking all my life to gluten free the last 10 years I’m still learning and experimenting. 🤦🏻‍♀️Keep up the good work. Yes your correct brands and weights do play a big role in our baking. ❤️🩷
