Looks great!!, love eggplant and the double dip version..but I will add a.little light soy and sesame oil for a more oriental flavour. Will be doing this very soon..as soon as I buy fresh veggies👍👍👌👌

Any recommendations for an egg replacement in the double dipping method? Also wondering what the baked version would be like... But I love eggplant so I am sure I would enjoy it. Thanks for this recipe.

You can use milk, even oil, some butter… anything liquidy really that would help the flour to stick to it…if baking spray the pieces with some oil spray then bake them. Hope you enjoy it when you try it!
