Normally as local we put noodles almost at end also for Chinese hotpot/steamboat because the soup will have all the flavour from the meat, seafood and vege combined. The noodle you had must be Sin Kee specialty noodle because very seldom noodle served on its own like that at hotpot. I like my fish cooked just above medium as well otherwise feel too soft.😂

I see☺️We Japanese also love to add noodles at the end of a hot pot. Hot pot is very similar to the Japanese taste and reminds me of Japanese winter!⛄️

Yes, Malaysian ikan tenggiri meat is very tasty, and can be cook in several way besides slice thin for hot pot, it can fry or make fish ball/ fish cake ( just take the meat without the bone,).
