Velveting is the only way. No going back now. Either you do or you don’t and if you don’t the chicken turns out inferior. Thanks for the priceless tip.

Good recipe! I myself don't use onions, but I've seen it done. The shallots would be especially nice. Tom kha gai is my favorite dish in the world. If I could only eat one food the rest of my life, it would be this. When I make a big pot to share with others, I make it without any peppers because I have my Thai pepper sauce and chili flakes for my serving, which I like fiery hot.

Egg white is alkaline which actually tenderises the chicken if you leave it in it for long enough.

Chef, this is my fave soup. ?? Would it not be better to strain the lemongrass and galangal and kefir leaves and then add the mushrooms, milk ect? The lemongrass and galangal are very woody and tough to eat. Just a thought.
@ieatishootipost2 жыл бұрын
Yes I suppose you can especially if it’s for fine dining but I actually enjoy sucking on the lemongrass and galangal 😅

Can I use Tom Yum paste instead of shrimp paste as hard to find Thai shrimp paste
@ieatishootipost2 жыл бұрын
You can leave it out if you don't have it. A bit of Tom Yum is fine too.
Thanks for your tips! Translated: It is considered close to Tom Kha Kai. But it looks wrong in the recipe and it's not appetizing. 1. Tom Kha Gai with or without mushrooms. This is correct. 2. Boiled galangal with chicken. Use tamarind. not lemon juice It will have oiliness mixed in the soup. 4. Tom Kha Gai is a mild spicy curry. So must have red chilli and dried chili sprinkles
